Any recipes to use up left over ham?!


Question: hearty ham casserole.

INGREDIENTS
2 cups potatoes, cubed
2 cups cooked ham, cubed
1 (15.25 ounce) can whole kernel corn, drained
1/4 cup finely minced fresh parsley
1/4 cup butter
1 tablespoon chopped onions
1/3 cup all-purpose flour
1 3/4 cups milk
1/8 teaspoon ground black pepper
4 ounces processed cheese food, shredded


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.
Combine potatoes, ham, corn and parsley; set aside. In a saucepan saute onion in butter for 2 minutes, stir in flour until blended well. Gradually add milk and pepper. Bring to a boil. Cook and stir for 2 minutes. Remove from heat and pour over the ham mixture. Stir to mix well.
Pour into greased 11x7 baking dish. Cover and bake for 25 minutes. Uncover, sprinkle with cheese and bake 5 to 10 minutes longer until cheese melts.

SANDWICH

sandwich or a omlette

get some rigatoni noodles, boil them then place in a baking dish. add the ham to the rigatoni and add spaghetti sauce then sprinkle on some shredded cheese. Back in the oven for 25 mins and serve.

my mom makes ham salad.she grinds up the ham and puts mayo and pickles in it..

Bean Soup -

1 (16 ounce) package dried navy beans
7 cups water
1 ham bone
2 cups diced ham
1/4 cup minced onion
1/2 teaspoon salt
1 pinch ground black pepper
1 bay leaf
1/2 cup sliced carrots
1/2 cup sliced celery



DIRECTIONS
Place rinsed beans into a large stock pot. Add water and bring to a boil. Boil gently for 2 minutes; remove from heat, cover and let stand for 1 hour.
Add ham bone, cubed ham, onion, salt, pepper and bay leaves. Bring to a boil; reduce heat, cover and simmer for 1 hour and 15 minutes or until beans are soft. Occasionally skim service of soup while it is cooking.
Add carrots and celery, cook until tender. Remove ham bone, scrape any meat from bone and place back into soup and serve.

we use ham (and any other leftovers) from the refrigerator...and stir fry them till they are hot...warm some flour tortillas and serve like a burrito.

Omelet, strata, ham salad, ham tetrazini.

Depending on How much you have left try making a Quiche. Little bit of work, but well worth it.

1/2 cup mayonaisse
1/2 cup milk
2 eggs
1 tbsp. cornstarch
1 1/2 cups of cooked ham or whatever you like
1 1/2 cups of grated cheese - cheddar or mozarella or combo of both
1/3 cup of chopped green onions ( can substitute with cooked bacon, green pepper or anything you want - broccoli is a good one)
dash of pepper

Partially cook your pie crust and let cool. Mix all ingredients together with a fork. Pour into cooled pie crust. Bake at 350 for 35 or 40 minutes. Knife should come out of center quite clean when quiche is done.

BEst Quiche you will eat!!!

flake it up real fine, add some dijon mustard, shallots chopped real fine, some sweet wine if you got, and some fresh chopped herbs lots of dill and tarragon, mix it up season till it tastes good, then get some good crusty bread and just spread it on and enjoy !

Corn and Ham Fritters

Corn and ham fritters with corn and ham - a corn fritter recipe with ham and corn kernels.

* 2 cups sifted all-purpose flour
* 1 tablespoon baking powder
* 1 1/2 teaspoons salt
* 1/4 teaspoon paprika
* 4 eggs, separated
* 2/3 cup milk
* 2 tablespoons melted butter
* 1 cup diced ham
* 1 cup corn kernels
* 2 tablespoons chopped parsley (or 1 to 2 teaspoons dried parsley flakes)

Into a large mixing bowl, sift together the flour, baking powder, salt, and paprika. In a separate bowl or large measuring cup, beat egg yolks; whisk in milk. Stir egg mixture into the dry ingredients until all ingredients are moistened.

Drop by tablespoonfuls into hot deep fat at about 370°. Fry for 4 to 5 minutes, until crisp and browned.
Makes about 18 fritters.

Red Rice with Ham

Bake this recipe for red rice in a casserole dish.

* 6 strips lean bacon
* 1/2 cup chopped onion
* 4 green onions, minced, with green tops
* 1 can (14.5 ounces) diced tomatoes
* 1 cup long-grain rice, uncooked
* 1 cup minced cooked ham
* Salt, pepper and hot pepper sauce, to taste

Heat a heavy skillet; add the bacon strips and cook them until crisp. Remove the bacon strips and drain on paper towels.

Cook the onion and green onions in the remaining bacon fat until tender. Crumble the bacon and return to the skillet, along with the tomatoes, rice, ham, salt, pepper and hot sauce.

Transfer the mixture to a buttered 1-1/2 quart casserole. Taste and adjust seasonings. Cover and bake at 350° for 1 hour, stirring every 10 to 15 minutes.
Makes 4 to 6 servings.

Both are very good and could even be served together.

I put a very generous portion of ham in scalloped potatoes.

omelets, stratta, soup, baked beans, scalloped potatoes and ham, pea and ham salad, ham and noodle cassarole, dip, cheese spread, there are ton of ways to use it up, surf the net and you will find tons of recipes

A favorite of my family:

Peel and cube potatoes, cook till done. Drain.
Add ham cubes, a can of English peas, drained; and a can of cream of mushroom soup mixed with a half can of milk. Simmer till bubbly hot.

several options. My wife and I enjoy "breakfast for dinner", sometimes. We will scramble eggs w/cheese, and use cubed ham in them. Also, make a garden salad and use ham, chicken, steak, or other leftover meat on top. Very healthy.
