Ingredients
3 tablespoons olive oil, divided
1/2 pound fresh shiitake mushrooms, stemmed, sliced
3 garlic cloves, minced
1 1/2 cups whipping cream
1 cup crumbled Gorgonzola cheese (about 4 ounces)
2 teaspoons minced canned chipotle chiles* (from canned chipotles in adobo)
8 (6-ounce) filet mignon steaks

*Dried, smoked jalape?os canned in a spicy tomato sauce called adobo; sold at some supermarkets and at specialty foods stores and Latin markets. Preparation
Heat 2 tablespoons olive oil in heavy large skillet over medium heat. Add shiitake mushrooms and sauté until soft, about 4 minutes. Add garlic and stir 1 minute. Add whipping cream and bring to boil. Reduce heat to medium and simmer sauce until thickened, about 4 minutes. Stir in Gorgonzola cheese and chipotles. Season sauce to taste with salt and pepper. DO AHEAD Sauce can be made 2 hours ahead. Let stand at room temperature.

Sprinkle steaks with salt and freshly ground black pepper. Heat remaining 1 tablespoon olive oil in another heavy large skillet. Cook steaks in skillet until brown on both sides and cooked to desired doneness, about 5 minutes per side for medium-rare. Rewarm sauce. Transfer 1 steak to each of 8 plates. Pour sauce over steaks and serve.

2/3 lb Potatoes (2 medium)

-- cut into 1/2-inch cubes
2 tb Butter; softened

1/4 ts Dried rosemary
1/4 ts Dried thyme
1/4 ts Pepper
1/4 c Lowfat milk

1 ts Olive oil
2 Filet mignon steaks
-- (about 4 ounces each)

Place potatoes in shallow 1-quart microwave-safe dish. Cover with plastic wrap, venting one corner. Microwave on HIGH 5 minutes until tender. Meanwhile, in small bowl thoroughly mix butter, cheese, rosemary, thyme and pepper. With electric mixer beat potatoes, 3 tablespoons of the butter-cheese mixture and the milk until smooth. In medium nonstick skillet over medium- high heat add oil and pan fry steaks to desired doneness, turning once. Microwave potatoes on HIGH 1 to 2 minutes until hot. Top each steak with 1 1/2 teaspoons of the remaining butter-cheese mixture. Serve with potatoes.

NOTE: Microwave cooking times are based on a 700-watt oven. Adjust cooking times to your own oven.

Not imaginative at all, but just fry the steak in butter, and top with the gorgonzola and melt the cheese under a hot grill- serve with veg and pots if you have them.

You could make potato and gorgonzola pie if you have pots (sliced thinkly, layered potatoes with gorgolzola between layers, topped off with milk and bked) or a souffle - but if you are asking for a recipe for the above 3 ingredients, you probably dont want to be bothered with that.

superheat a griddle, add butter, add filet and cook till the outside is blackened and almost cooked to preference.
Add cheese and finish in oven.

Fillet mignon with Gorgonzola compound butter. Mix the cheese and butter half and half. Refrigerate. Pan fry the steaks and place a generous amount of the cold butter on each as they are served.

If that's all you have, I'd cut a pocket into the filet and stuff it with the gorgonzola, then panfry in butter.

Peppered Fillet Mignon With Mushroom Wine Sauce

Ingredients
Steaks
4 filet mignon steaks, 1 inch thick
1 tablespoon freshly ground black peppercorns
1/2 teaspoon kosher salt
Wine Mushroom Sauce
3 ounces chopped shiitake mushroom caps
1 tablespoon flour
1/4 cup shallots(minced)
1 tablespoon balsamic vinegar
1/3 cup red wine(I used Merlot, my favorite)
1 cup beef broth
2 teaspoons worcestershire sauce
1 teaspoon tomato paste
1/8 teaspoon rosemary
1/2 teaspoon Dijon mustard
Directions
1Prepare Mushroom wine Sauce first and set aside: Combine Mushrooms and flour in a bowl and toss to coat and set aside.
2In a medium skillet, combine wine, shallots, and balsamic vinegar.
3Bring to a boil and cook until thickened.
4Reduce heat.
5Add broth, Worcestershire, tomato paste, and rosemary, stir to combine and cook 1 minute.
6Add mushrooms and cook 3 minutes, until mushrooms are tender.
7Stir in mustard.
8Serve sauce over Filet Mignon.
9Fillet Mignon: Sprinkle steak with crushed black pepper and salt.
10Heat a non stick skillet over medium high heat or grill over a medium heat.
11Cook steaks for 3-5 minutes on each side until fillet is cooked the way you like it.
12Serve with sauce.
