Cut out the size of the pasty on some puff pastry
Fold in half
On one half add grated cheese + some finely chopped onion.
Wet edges with water
Fold the other half over then seal with a fork (press fork down around edges)
Score top of pasty with a sharp knife
Brush some milk on top of pasty
Cook for 30 mins on 180

This is similar to Neda's but it suggests cooking the onions and adding parsley.

I think the character of the cheddar and the pastry are really important variables.

cheese and onion pasty

Ingredients
puff pastry(I use frozen, but homemade is fine if you are a purist)
1/2 ounce unsalted butter
2 medium onions, finely chopped
1/2 lb double Gloucester cheese or cheddar cheese, grated
4 tablespoons fresh parsley, chopped
Directions
1Thaw the pastry.
2If using homemade, put your dough in the refrigerator to chill.
3Preheat oven to 400°F.
4Melt the butter in a frying pan on a low heat.
5Mix in the onions and cook them until they are just beginning to soften.
6Mix them with the cheese and parsley.
7Roll out the pastry and cut out 4 rounds, each about 6 inches in diameter.
8Put a quarter of the cheese mixture on one half of each one.
9Fold over the other side and crimp the edges together.
10Lay the pasties on a floured baking sheet and brush them with milk or beaten egg.
11Bake them for 30 minutes and serve hot.
