Answers: My husband claims undercooked chicken is more dangerous to eat and could kill him and undercooked beef is not as bad but could still make you really sick.

It depends on whether the beef is ground.
A chunk unground beef (steak, roast) is safe to eat on the rare side. Any bacteria will be on the outside of the cut of meat and will be quickly killed during cooking. Not so for ground beef, where bacterial contimation will be mixed throughout, including the coolest center of the burger.
When a chicken is contaminated with salmonella, it is contaminated throughout the flesh. Rare chicken is more likely to make you sick than rare beef because salmonella is pretty common in American chickens. However, salmonella isn't as deadly as E coli 0157 H7 (the strain that has caused the problem with beef).
So, undercooked chicken has a fairly high likelihood of making you very sick, but is usually not life threatening. Undercooked ground beef will usually not make you sick, but rarely may give you a life-threatening illness. Rare steak or roast is not a problem.
Chicken is. I hear of all these things that uncooked chicken can give you, but people are always eating rare steaks so I would have to say chicken is more dangerous.

Any undercooked meat can make you sick if there is some contagion in the meat, but it is more likely to get sick with undercooked poultry (including raw eggs). Plus, undercooked chicken doesn't taste good, whereas undercooked beef does.
Your husband is correct. You can get salmonella food posioning from undercooked chicken.

Either can cause food bourne illness. Chicken is often cooked with the skin, which is where the salmonella lurks bu ground beef can be contaminated with E. coli fairly easily if strict standards in processing aren't maintained. Someone made the very good point that undercooked chicken is disgusting to eat.
Neither of these organisms are liable to kill you unless you are very young, very old or have a immune deficiency/debilitating illness, though.
This depends on the cut of beef....if your are eating ground beef that is under cooked and is contaminated with E coli... It can lead to serious illness...kidney failure,even death. in the young, very old and those in compromised health...
when meat is ground contamination is spread throughout the meat.but..If a steak has been contaminated.and It is only the outside effected....it is killed by the heat applied to the surface when cooked. so eating it rare is an option...

Beef could still contain salmonella, but not as likely to as chicken. Therefore, steak doesn't have to be as well cooked. I still cook mine until it's brown throughout. Although occasionally I may have medium well steak in a good restaurant, I won't eat hamburger that's not fully cooked. And I have gotten sick after eating improperly cooked beef.
i would have to agree that the chicken is alot more dangerous to eat undercooked you can get salmonella and get really sick but beef on the other hand can be eaten undercooked, i always prefer my steak to be made medium rare which is a little undercooked but safe. when cooking meats pork, chicken and fish have to be cooked well so that you dont get food poisoning
