I need some assistance.?!


Question: Im on the look out for quick and easy but very flavorful Mexican, Spanish recipes to go agains the traditional tacos, paellas, burittos, tostadas we ususally have. So give me a link or recipe for your best. Please keep in mind they need to be picky kid friendly and Not to spicy. Im just on the look out to see what you have to offer. I would go thru recipe sites but give me your best shot. Best wishes to you all and thank you for your help.

If you don't mind Tex-mex more than Mexican, here is a recipe that goes over very well everytime I cook it at home. I have taken it for potlucks too and never get to have any left overs to take hom.

I have used both corn and flour tortillas and like it better with the corn. Also try a Fritos with it (scoops).


Ingredients

2lbs ground beef
1 onion-chopped
2 tsp. minced garlic
1 can black olives-sliced
1 4oz can diced green chili peppers
1 10oz can diced tomatoes with green chili peppers
2 1/2 cups red taco sauce
1 16 oz cans refried beans
12 (8 inch) flour tortillas
9 oz shredded shredded Colby cheese (I use cheddar)

Prep
1. Preheat oven to 350 degrees.
2. In a large skillet over medium heat, sauté the ground beef for 5 minutes. Add the onion and garlic and sauté for 5 more minutes. Drain any excess fat, if desired. Add the olives (save some for the end) green chile peppers, tomatoes and green chile peppers, taco sauce and refried beans. Stir mixture thoroughly. Reduce heat to low and let simmer for 15 to 20 minutes.
3. Spread a thin layer of the bottom of a 4-quart casserole dish. Cover with a layer of tortillas followed by more meat mixture, then a layer of cheese. Repeat tortilla, meat, and cheese pattern until all the tortillas are used, ending with a layer of the meat and cheese on top. Sprinkle with the saved black olives.
4. Bake for 20-30 minutes or until cheese is slightly brown and bubbly.

TIPS:
#1 If you don't like your food very spicy, add only 1/4 -1/2 of the chilies.
#2 Don't leave out the diced tomatoes, it tastes kind of funny without it.

The most kid friendly Mexican/Spanish thing I know is a quesadilla, which you can make with all sorts of things to change it up a bit (but I'm guessing you already know that!). My favorite is to add in things like avocado and tomato, sometimes chicken. I also sometimes do mine with pepperjack cheese so there's a little more kick. You can also use the flavored tortillas for something different.

What about soup? You can make taco or tortilla soup, here's a link to the latter, which is pretty good:

(Recipezaar is pretty cool so if you don't like this recipe you can hunt around until you find one that works better. Also, a lot of times people will comment how they changed a recipe to better suit their family's tastes so you can get good ideas that way too).

Taco pizza is a good idea and generally pretty kid friendly.

(I don't like onions so I don't use them, use a little taco seasoning instead when browning the meat).
