I'll share a recipe with you :) These are the lightest, fluffiest, most amazing pancakes I have ever made and they beat anything you will get in a restraunt. The club soda trick works too though, I know that from experience. Here you go:

1 1/2 cup flour
3 1/2 teaspoon baking powder
3/4 teaspoon salt
2 Tablespoon sugar
1 1/4 cup warm milk
1 egg, room temp (just stick it in a bowl of hot water for a couple minutes to take the chill off)
3 Tablespoon melted butter
1 teaspoon vanilla

Combine the dry ingrediants and make a well in the center.

Add the wet ingredients into the well and combine to make batter. Cook over medium high heat. These are to die for, enjoy!!

Make yeast pancakes. They are the best.

I like the bisuick pancakes

Club Soda! Seriously adding club soda in place of water when using a panake mix makes the best pancakes. They are a bit sweeter and much lighter and fluffier. I have heard that this is how they get the pancakes fluffy at Perkins resturant.

Aunt Jemima pancake mix.

Use a store bought buttermilk mix, and add a little vanilla to it. You can top with syrup,fresh fruit & whipped cream,cinnomin sugar,

Any pancake mix you want to use, I love the Bisquik. Follow directions but add a 1/2c Ricotta cheese in the mixture and 1/2 tsp vanilla extract, then instead of water or milk use buttermilk. These are the best pancakes you have ever tasted!

To make Blueberry pancakes use the frozen sweetened blueberries in the bag from the freezer section. Just dump in a handful still frozen.

Here's a fantastic pancake recipe:

2 cups buttermilk (you can use the dried buttermilk powder and water).
2 cups whole-wheat pastry flour
3 T sugar
1 T baking powder
3/4 t baking soda
3/4 t salt
1 extra large egg
3 T butter, melted and cooled slightly

Whisk dry ingredients together in a medium bowl. Whisk egg, butter, and buttermilk until combined. Gently whisk the milk mixture into the dry ingredients. Don't overmix - the batter should be a bit lumpy.

Heat a non-stick griddle over medium heat. Add 1 t. oil and wipe with a paper towel or brush to coat the pan evenly. Pour 1/4 cup batter onto the pan for each pancake. When the edges begin to look dry and the bottoms are a golden brown, flip and cook until golden brown on the second side.

I always add a teaspoon of baking powder and a few tablespoons of lemon, it makes them really fluffy and yummy, plus it's really easy. Also if you like the lemon flavor you can add more to make lemon pancakes. Good Luck and Happy Feasting!!
