I have a large rolled rump(4.5lbs)Can I cook it in a slow cooker and do I braise it first in the oven? I don't!
Answers: want to ruin it. We don't get a nice piece of meat to often. Will it be tender? Any gravy? or should I just stick to the oven? maybe with a cooking Bag? Thanks so much- I'll be waiting.....
what you want to do is to brown the roast in oil on all sides. add this to the crock... add a packet of onion soup powder and a can of cream of mushroom. add some water and let this cook on high for at least 4 or 5 hours. Add veggies the last hour or so. You will be so happy. You don't need to add anymore spices because the onion soup seasoning and mushroom cream soup will take care of that and the gravy. Browning it gives it that oven taste and a nice crust on the outside.. this should not take no more than ten mins and a combination of butter and oil is best. add enough water to this to cover the meat. Hope this works out for you.
That's a nice roast! If it's a premium cut of beef you can actually just oven roast it to about 130-135F for medium rare - don't cook it any more than that. If you want to braise it or slow roast it, definitely brown it in a bit of oil in a heavy skillet on all sides first. Then add to your roasting pan or slow cooker, add a bit of wine/beer/broth or combo of those (you want to go about half way up the roast), add some crushed garlic and chopped onions, a bay leaf and some thyme, and then either slow cook for 8 hours or cover and cook in the oven for about 4...delicious! Then I would just serve it with the natural juices but if you want to make gravy, take the drippings and heat on the stove, Stir in a couple of tablespoons of flour and stir well until well dissolved, Simmer until thickened, adding salt and pepper to taste.

Dee has essentially the same info I was going to give. The gravy it makes is wonderful!! In fact, I sometimes use 2 cans of soup & 2 envelopes of onion soup mix, so I have lots of gravy..
