I made some veg ice cream and it tasted good but was rock hard..what did I do wrong?!


Question: Put 3 layers in loaf pans and cut them into 3-flavor slices. One flavor is choc banana split . It had bananas, strawberries, pineapple and chopped cashews. It was not quite as hard as the other layers. Second layer was pistachio gelato with chopped pistachio and pistachio paste. Third layer was peach ice cream. I was using cocoanut milk for the cream in all of them, but the first one had sweetened condensed soy milk too. All of them had soy milk in them. I guess I hurried on the last two layers and they weren't really frozen in the ice cream machine yet before putting in loaf pans.

you need to add just a touch of veg. gelatin sheets. normally fats and such would keep the crystals from forming (its basic chemistry) but in your stuff, you need something else. Most store types (including sorbet) use gelatin

um....where does the "veg" come into play?? the above sounds delish.
