Any suggestions on something fantastic to make for a breakfast potluck at work?!

Answers: It's this Friday, and I'd like to make something different (but not crazy different). Things like sausage with biscuits and breakfast burritos are already taken. I'm leaning towards grits with fixin's: butter, bacon bits, cheese, etc., but wondered if anyone has something fast that they make for these types of things that really WOW the crowd.

This is SO easy, and you can vary the pudding to change the flavor. You put it together the night before, then just bake for 40-45 min. in the morning (while you're getting dressed) and take it to work....
TOFFEE NUT COFFEE CAKE
1 pkg. (2 doz) frozen rolls (Bridgeford makes them)
1 small pkg. butterscotch pudding (not instant)
1/2 c. brown sugar
1/4 c. melted butter
2 tsp. cinnamon
3/4 c. chopped walnuts or pecans
Put a layer of frozen rolls (12) into greased bundt or Angel Food cake pan. Sprinkle with 1/2 of the rest of ingredients, in order given. Put remaining rolls on top; sprinkle with rest of ingredients. Cover with waxedpaper and let rise OVERNIGHT. Bake at 350 for 40-45 min. (watch closely) Invert on large plate and serve.
(pull-apart cake, and sometimes called Monkey Bread)

I took this to work a few months ago and they loved it.
Southwest Breakfast Casserole
A great way to feed a hungry crowd for breakfast, this can be made ahead and put in the oven right before your guests arrive. Also great for Potlucks!
6 Slices white bread, crusts removed
1 lb Pork Sausage
4 C Colby Cheese, shredded
4 oz Chopped Green Chilis (small can)
6 eggs
1 t salt
1 t dry mustard
2 C Half & Half
Butter or Margarine, softened
1. Lightly butter both side of bread slices and place in 9x13-inch baking dish.
2. In nonstick skillet, over medium-high heat, brown beef sausage; drain well and pat with paper towels. Sprinkle sausage over bread slices.
3. Sprinkle cheese over sausage. Follow with a layer of chopped green chilies.
4. In medium bowl, beat eggs lightly. Add salt, dry mustard and half-and-half. Mix thoroughly. Pour over casserole.
5. Cover with foil and refrigerate overnight.
6. To bake, preheat oven to 350°F and bake casserole 45 minutes, or until bubbly and lightly browned. Allow to stand 15 minutes to set. Cut into squares and serve with picante sauce on the side.
How about sticky buns or cinnamon rolls? If you don't like the idea of trying your hand at a yeast bread, why not consider breakfast muffins or banana bread? Think sweet instead of savory for a change of pace :)
Try making monkey bread, it is sweet and easy to serve. There are many variations of the recipe on www.cooks.com. It is super yummy, fun to make and fun to eat!
Quiche is a great alternative. You can make one with meat and one vegetarian, for variety. Croissants with good fruit preserves and honey would be great. And remember fruit, it is a great way to start out the day. What about yogurt with fruit on the side?
Egg and sausage casserole is always a hit. Or you could make stuffed baked french toast casserole. You have gotten some great ideas...quiche, monkey bread, breads or cinnamon rolls. You will definately find something here that will be a big hit. Good Luck.
How about a green chili breakfast casserole. I don't have a recipe I just mix stuff together but here is how it is made:
spray Pam on the bottom and edges of a 9X13 rectangle pan and line the bottom with hash browns. Brown some sausage and mix it with raw eggs, onions and green chilies. Pour over the hash browns and bake at 350 till the eggs are set all the way through. Top with Cheddar cheese. Serve with salsa. This is one of my favorites.
Another one I like and also easy is quiche:
Bake some store bought pie shells, mix together eggs, bacon, and American or Cheddar cheese. Pour in pie shell and bake till eggs are set through.
You can be creative with these recipes as well. Like with the quiche you can add anything to the eggs you want, ham and bacon, onions, hash browns, mushrooms, bell peppers or what ever strikes your fancy. These are very easy to make, easy to transport and easy to serve.
grits w/ the fixins are one of my faves!
make a quick fruit salad - dice whatever yummy fruits they have on sale, toss w/ a little lime juice (stops browning and tastes great) and vanilla yogurt. try to find fun fruit like star fruit or other tropical something. don't be afraid the check out the reduced section - as long as its not bruised or just smushy, riper fruit is great in this. serve w/ Cinnamon pita chips or the Cinnamon sun chips for dipping.
don't laugh, but oatmeal cookies would be a fun breakfast thing - http://www.kraftfoods.com/kf/recipes/rec... - this uses grapenuts to make them crunchy!
make baggies of breakfast snack mix - toss together 3-4 types of cereal (mini wheats, cheerios, quaker oatmeal squares, etc) w/ some dried fruit. everyone can take a bag for later.
make some scrapple, haggis, spam, scrambled in with eggs!
This is so yummy, no one will even realise it is healthy!
SPINACH, ARTICHOKE AND MUSHROOM
CASSEROLE
1/2 lb. sliced mushrooms
2 onions, chopped
2 jars artichoke hearts (drain and save marinade)
1 pkg. frozen chopped spinach, thawed and drained
5 eggs, lightly beaten
1 1/2 c Cheddar cheese, grated
Salt and pepper to taste
Saute mushrooms and onion in 2 to 3 tbsp. of marinade. Combine with remaining ingredients in a lightly greased shallow casserole and bake in a 350 degree oven 30 to 45 minutes. Serves 4.
You could make something like a skillet..get an aluminum pan and layer:
Chop potatoes and pan fry them.
Cooked sausage, bacon or ham, (maybe all 3)
Scrambelled eggs.
Top with cheddar cheese.
Maybe a little fresh chopped tomato?
Cover with foil to keep warm.
