Caesar Dressing:
3 anchovy fillets, finely chopped
1 tablespoon finely chopped capers
1 tablespoon Dijon mustard
1 egg yolk
1 teaspoon minced garlic
3/4 cup vegetable oil
1 tablespoon red wine vinegar
1 tablespoon lemon juice
1/4 cup heavy cream
Kosher salt
(Can also be made in a small food processor)
In a medium bowl mix together the anchovy fillets, capers, mustard, egg yolk, and garlic. While whisking vigorously (or in a food processor, while blending)add the vegetable oil in a slow, steady stream. Whisk in the red wine vinegar and lemon juice. Stir in the heavy cream and season, to taste, with the salt.
BEST CAESAR DRESSING
Ingredients
1 cup mayonnaise(Not salad dressing)
1/4 cup egg substitute, beaten(as this dressing is not cooked I recommend the former) or
1 large egg, beaten(as this dressing is not cooked I recommend the former)
1/4 cup parmesan cheese, grated
2 tablespoons water
2 tablespoons olive oil
1 1/2 tablespoons lemon juice
1 1/2 tablespoons anchovy paste
3 garlic cloves, minced very fine
2 teaspoons sugar
1/2 teaspoon black pepper, coarsely ground
1/4 teaspoon salt
1/4 teaspoon parsley, freeze-dried and crushed
Directions
1 Combine all ingredients in a medium bowl.
2 Whisk for 1 minute.
3 Cover and refrigerate for a minimum of 2 hours (over night is best).
