Frugal Gourmet's Pasta Carbonara recipe
Ingredients
? pound bacon -- chopped (or pancetta if you want to be authentic)
1 cup milk (whole milk works best, but skim, 1% or 2% work too)
1 stick (? pound) butter (this has to be real butter)
2 tablespoons red wine vinegar
1 pound pasta (I like to use spaghetti, but any pasta will work)
2 eggs -- whipped (or at least well beaten, I just do this by hand)
1/3 cup grated parmesan cheese -- freshly grated is preferred
(you can use the pre-grated stuff if you have to)
Salt and pepper -- to taste
Preparing the Dish
Cook the bacon in skillet until it is just crisp, then add the milk and butter. As soon as the butter is completely melted, add the vinegar. This will turn the milk into a cheese. Simmer this sauce for about 15 minutes, until it cooks smooth.

Cook your favorite pasta al dente. Drain, and add to the skillet mixture, coating the pasta with the sauce. Add the beaten eggs and the parmesan cheese, and toss.

Add salt and pepper. Serve with a salad, garlic bread, and a good Italian red wine.

Pair up this angel hair pasta and pesto reciepe with some nice chicken breasts

8 ounces uncooked elbow macaroni
2 (6 ounce) cans white tuna, drained and flaked (or cooked ground beef in butter)
2 (10.75 ounce) cans condensed cream of mushroom soup
4 cups shredded Cheddar cheese
1 cup frozen green peas
2 teaspoons dried dill weed
1 teaspoon ground black pepper
2 cups French-fried onions

DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add macaroni pasta and cook until tender, about 8 minutes. Drain.
Preheat the oven to 350 degrees F (175 degrees C). In a large bowl, stir together the tuna, cream of mushroom soup, cheese and peas. Season with dill and pepper then add the drained macaroni and stir to coat. Transfer to a 9x13 inch baking dish.
Bake for 25 minutes in the preheated oven, or until heated through. Sprinkle the French-fried onions on top and return to the oven for 5 minutes or until lightly toasted

Fajitas can be quick and easy. Just marinate whatever meat you want to use (beef skirt steak, chicken breast, shrimp, pork) in 1/4 cup lime juice, 2 tsp cumin, 2 tsp chili powder. 3 tbsp chopped cilantro, 1/4 cup light olive oil, 1 garlic clove chopped. You can prepare this the night before, put it all in a gallon zip lock bag and it'll be ready the next evening. Cook it in a skillet until the meat is almost done, add a bag of frozen peppers and onions. Warm up a few flour tortillas, serve with your favorite salsa, guacamole, and sour cream. You could even make a simple version of spanish rice. Cook 1 cup rice, when it's done add about 1/4 to 1/2 cup of salsa. Or when you begin cooking the rice add 1 tbsp tomato paste, a little chopped onion, green pepper, cumin, chili powder, and lime juice, stir before serving.

If you choose to make shrimp fajitas, reduce the amount of time you allow it to marinate significantly.

Two menus are guaranteed man pleasers.
Broiled steak with baked potatoes and salad.
Any pasta dish with garlic bread and salad.
For a special touch, melt chocolate in the microwave and have cut up fruit to dip in it-strawberries, apples and bananas are good. You can figure out other fun things to do with the chocolate as well.

This is fabulous!

PB and J.

I'd say that after 4 years, stick to what you know! Anything you make that is presented at a dressed up table with candles and a nice wine should be good. Then, wow him with a fancy dessert from the pastry shop.
My advice is: Don't fret over a new recipe; rather, get yourself dolled up and make the evening about the two of you instead of the food!!!

you could always stick to something you know how to make. but something like a baked chicken or meat loaf.
