CHEESE SAMBOOSA - triangular fried "eggroll"-like appetizers with a tasty feta
cheese filling
A Ramadan Must-Have!! *smile*
Ingredients:
1 (500 gram) box of feta cheese
1 medium onion, finely chopped
1-2 Tablespoons of olive oil
1 clove of garlic, smashed
1 medium tomato, finely chopped
1/2 Maggi chicken bouillon cube
1 Tablespoon oregano flakes
Samboosa wrappers, eggroll wrappers, or filo pastry sheets
vegetable oil for deep frying
Cut up the feta cheese into small cubes. Cover with in cold water and soak for
at least a half an hour (to remove excess salt). In a skillet saut???? the finely
chopped onion in a few Tablespoons of olive oil. When the onion is translucent,
add the finely chopped tomato and smashed garlic. Cook stirring for 2 minutes.
Add 1/2 of a Maggi chicken bouillon cube and the Tablespoon of oregano flakes.
Stir until the bouillon cube is dissolved. Remove from heat and cool to room
temperature. Drain the feta cheese and add to the onion mixture. Mix (smash
together) well.
To roll: Lay out a samboosa wrapper (long and rectangular in shape) with a short
edge of the rectangle directly in front of you. Place a rounded teaspoon of the
feta cheese filling near this edge. Then folding away from you (towards the
other short edge), enclose the cheese mixture in the wrapper by folding the
wrapper in a triangular shape. On the side, make a paste of flour and water (1/4
cup flour and 1/2 cup water). Moisten the final edge of the samboosa wrapper
with the flour paste to cause it to stick and keep the individual samboosa in
its triangular shape. Place wet ("pasted") side down on a lightly greased plate.
Note: if using eggroll wrappers or filo dough, you must cut it into rectangles
before stuffing with the meat mixture. For filo dough, use a thickness of two or
three sheets. The rectangles can be cut 1 1/2 - 2 1/2 inches wide, depending on
the desired size of the finished appetizer, and should be long enough to enable
you to completely enclose the cheese mixture
when folding.
When all of the samboosa have been rolled, fry a few at a time in a heavy
skillet in one inch of vegetable oil until the outside is golden and crispy.
Flip at least once while frying to brown both sides. Drain on paper towels.
Serve warm.

great lasagna
1 box lasagna noodles cooked
1/2 pound butter
Filling:
1 pound feta cheese
1/2 bunch dill
1 teaspoon black pepper
2 large eggs
Sauce:
9 tablespoons butter
9 tablespoons flour
3 cups whole milk
4 medium eggs
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons grated parmesan cheese
Directions
Slice feta cheese and soak in cold water for 1 hour to take salt out then crumble with fork.
Mix with chopped parsley leaves and black pepper then add 3 eggs and stir well.
Melt butter and add flour stirring with a wooden spoon.
When bubble starts add warm milk while stirring being careful not to have lumps.
On a low heat simmer to make a thick sauce then add salt and pepper.
Add eggs one by one stirring well after each egg.
Add parmesan and stir well.
Grease lasagna pan with butter.
Put one layer of cooked lasagna then sprinkle with 2 tablespoons of melted butter.
Pour 1/2 tablespoon of sauce on 6 or 7 places.
Repeat until you use half of the lasagna noodles.
Spread filling evenly.
Finish with the rest of the lasagna the same way.
Cover the top with the remaining sauce.
Bake at 350 for one hour.
Let stand 15 minutes and serve warm.
***Greek Pasta Salad with Feta***
12 ounces ditalini or other pasta
1/2 cup reduced-sodium chicken broth
1 tablespoon olive oil
1 tablespoon red wine vinegar
2 cloves garlic, minced
1 teaspoon Dijon mustard
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and ground black pepper
2 cups cooked cubed chicken (about 1 pound)
1 green bell pepper, seeded and diced
1/4 cup chopped fresh mint leaves
1/2 cup crumbled feta cheese
Cook pasta according to package directions.
In a small bowl, whisk together broth, oil, vinegar, Dijon mustard, thyme, salt and pepper to taste. Add diced chicken, green pepper, and mint.
Drain pasta and add to bowl with dressing and chicken. Toss to combine. Cover with plastic and refrigerate until ready to serve. Top with feta cheese just before serving.
I like to make a greek salad with just olive oil and lime juice and a few herbs.

Of course you can omit or change ingredients to your liking.
If you don't want to make your own dressing, the Kraft Greek Salad Dressing works well too.
i like feta on pizza , philly chez steaks , in panzerotti or calzone , just plain by itself . i use it more as a topping than anything

2. 2 tablespoons chopped pitted ripe olives
3. 10 cups torn romaine lettuce
4. 3 plum tomatoes, cut into wedges
5. 1/2 medium cucumber, cut in half lengthwise, sliced
6. 1 (4 ounce) package ATHENOS Traditional Crumbled Feta Cheese
2. Cooking Directions
1. Mix dressing and olives; set aside.
2. Toss lettuce with tomatoes and cucumber in salad bowl.
3. Drizzle with dressing mixture; sprinkle with cheese.

INGREDIENTS
* 3 tablespoons olive oil
* 1 large onion, chopped
* 1 bunch green onions, chopped
* 2 cloves garlic, minced
* 2 pounds spinach, rinsed and chopped
* 1/2 cup chopped fresh parsley
* 2 eggs, lightly beaten
* 1/2 cup ricotta cheese
* 1 cup crumbled feta cheese
* 8 sheets phyllo dough
* 1/4 cup olive oil

DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x9 inch square baking pan.
2. Heat 3 tablespoons olive oil in a large skillet over medium heat. Saute onion, green onions and garlic, until soft and lightly browned. Stir in spinach and parsley, and continue to saute until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.
3. In a medium bowl, mix together eggs, ricotta, and feta. Stir in spinach mixture. Lay 1 sheet of phyllo dough in prepared baking pan, and brush lightly with olive oil. Lay another sheet of phyllo dough on top, brush with olive oil, and repeat process with two more sheets of phyllo. The sheets will overlap the pan. Spread spinach and cheese mixture into pan and fold overhanging dough over filling. Brush with oil, then layer remaining 4 sheets of phyllo dough, brushing each with oil. Tuck overhanging dough into pan to seal filling.
4. Bake in preheated oven for 30 to 40 minutes, until golden brown. Cut into squares and serve while hot.
I like it in pasta.
You take some onion and garlic in a pan add some spinach cook for a little add cooked pasta and add the feta and melt. It is good.
Baked Feta Cheese
1 block feta cheese (about 1 lb.)
3 cloves garlic minced
1/4 t. sea salt
1/4 t. freshly ground pepper
3 - 5 T. fresh oregano leaves
1/3 C. olive oil (may be herb flavored)
1/2 t. crushed red pepper
1/4 t. lemon zest finely grated
Place all ingredients except cheese in a large plastic zip lock bag. Close the bag and tip the bag back and forth to mix the ingredients. Break the feta cheese into large chunks and add to the bag.
Marinate for 3 -5 hours. Preheat oven to 375° F.
Place cheese and marinade in a pretty oven proof serving dish. Bake for 10 - 15 minutes until the feta starts to soften.
Remove from oven and serve with fresh crusty bread.
If you're looking for a delicious, easy way to use feta, I can't recommend this enough! Make a salad with grilled chicken, greens of your choice, a few chopped walnuts, a handful of dried cranberries, and feta. I don't use salad dressing, but I know that raspberry vinaigrette works well on this.
I will make egg's and put feta in it......I'll also put it in my salad with vinaigrette dressing.
I cant compete with the receipes that I see already posted, but I love to eat Spanokopita. They are feta and spinich inside phyllo dough triangles. They are absolutely delicious. I guess on a night out, give them a try. Enjoy!
