How are you supposed to soak dried mushrooms?!


Question: Im doing a risotto with dried mushrooms in. The recipe says soak them for 15 min in boiling water, then use the water as stock. The mushrooms packet says soak for a number of hours. Which should I do?

To receive the full taste and texture, soak in cold water for 12 hours, in the fridge. The boiling water will not exctract the finer flavours. If you're pressed for time use the rapid method. A little fresh thyme is lovely with your risotto.

You could bring some beef or chicken stock to a boil and use that to soak the dried mushrooms. However, if you soak them overnight, (or hours) then put them in the refrigerator with some film or a lid over the bowl. You may have to experiment and try both ways to determine what pleases you. If the mushrooms hasn't returned to the consistency you want after 15 minutes, (feel with your fingers) put them in the refrigerator until needed.

I never heard of mushrooms being soaked but the recipes seems to obviously require the stock from the mushrooms. If the mushrooms are the same name as in the recipe, then follow the recipe.

recontitute them in milk then drain and use. done this many a time with dried wild mushrooms enjoy!

Soak them, boiling is just a shortcut, better if soaked.
