Pickled eggs!!?!
Answers: I am looking for a new recipe to make pickled eggs. I currently use a combination of beets, beet juice, vinegar, onions and pepper corns. Something new would be appreciated!!
PICKLED EGGS
1 or 2 doz. boiled eggs, shelled
2 c. vinegar
1 tbsp. salt
1 c. water
1 tsp. black pepper
1 tsp. dry mustard
1 pod hot pepper
1 med. size onion
Heat vinegar and water to boiling and pour over eggs and sliced onion. Let stand 10 days. Very good with beer.
I just use the brine left in the jar when I empty a jar of dill pickles. (I hate beets!)
Just drop them into a jar filled with red or white wine vinegar. You could add some fresh chopped chives to it also. Some use the juice of the pickles after they have eaten them.
PICKLED EGGS
4 1/2 doz. eggs (med.)
14 oz. light vinegar
14 oz. dark vinegar
4 oz. yellow chili juice
12-15 whole cloves
4 bay leaves
3/4 c. sugar
1 tsp. celery seeds
1 heaped tsp. garlic powder
Handful of chili's for top of jar
Combine all but eggs and chili's in 1 gallon jar. Shake well then add eggs and chili's. Let set for 24 hours at least.
Fill 1 glass gallon jar with layers of sliced cucumbers and onions and boiled eggs. Add vinigar to fill to the top add some fresh dill.
Or,I sometimes buy the mezzanita( not sure of spelling) pickled veggies in the suppermarket and just add boiled eggs to that in a gallon jar.
