We are having friends over for lunch on sunday. I don't want to do a traditionnal roast. Does anybody know!

One of my mother's favorite recipes for "company" was Stuffed Flank Steak. Although I don't have her recipe, this is pretty darn close. It is a very presentable dish that looks like you spent hours slaving over it!

What about pork chops and some side dishes or veggies? Or perhaps some spagetti? (I don't know if you consider that pasta) Or having steak and potatoes is a classic, and maybe some pie for dessert?

bbq pork roast in oven or crock pot.
serve with baked beans, hashbrown casserole,
corn on the cob and coleslaw.

This is a family recipe we all bring to things.... or eat at home hot with some rice and green veg, leftover, cold in sandwiches, sliced leftover on caesar salad also amazing.
You can make up the crumbs in advance.
You can make up the garlic butter in advance.
You can roll the chicken and put it in a glass pan in your fridge until you are ready to cook it.....

Rolled Chicken Breasts

6 single skinless boneless chicken breasts

Crumb mixture: can make this ahead keep in fridge one day or freeze longer.
2 & ? cups soft breadcrumbs – you probably wont be able to buy these so you will have to make them – 7 slices of bread should do it. Hard dry crumbs do not work.
? cup Parmesan cheese
? cup parsley flakes

Butter mixture: you can make this well in advance too.

? cup butter
? tsp garlic powder but I use 2 cloves pressed or chopped very fine
? tsp dry mustard
? tsp worchestershire sauce
Melt together

Dip chicken breasts in the butter, coat well then place in crumbs and coat well – I put a bit extra in the middle. If you have crumbs left over you can freeze them if they haven’t had the raw chicken in them, so use them as you need them. If you use the right amount for each breast shouldn’t have any left.
Roll the breasts up and place in dish. Pour leftover butter over.
Cover and bake at 325 F for 1 1/4 hours. Baste occasionally.

Serves 4 to 6 people. For a party buffet I do quite small pieces of chicken and you get 20 or so pieces.

I would go for a one dish meal that you can stick on the table and let everyone tuck into. Then you just need a few loaves of bread and a vinaigrette dressed salad. A potato dauphinois based dish with lamb shoulder layered between the potatoes would be nice or how about a stew.

Au Juise French fries Salad

You could make quiche and salad. Maybe a broccoli cheddar and a traditional quiche lorraine and green salad and a loaf of warm crusty bread.

Spaghetti with Sausage, Garlic, & Spinach
Makes: 4 Servings
Total Time: 45 min

Ingredients:
1 pkg. frozen spinach
1 lb. bulk turkey sausage or pork sausage
1/4 cup light olive oil, divided
3 cloves garlic, minced
1 lb. spaghetti
1/4 cup parmesan cheese
salt & pepper to taste

Preparation

While bringing the water for the spaghetti to a boil, place the frozen spinach in a microwave-safe dish and microwave until thawed.
When spinach is thawed, drain well in colander.

Pre-heat large non-stick skillet to medium-high. Cook spaghetti according to directions on package.

While spaghetti is cooking, brown sausage in half of the olive oil. Add minced garlic and saute until golden. Carefully add spinach to the skillet and heat through.

Combine spaghetti with mixture in skillet, and stir in the remaining half of the olive oil and then the Kraft Parmesan Cheese.
Heat through, gently toss, and serve.

Goes great with some crusty bread spread with roasted garlic, a salad, and a glass of wine.

Note:
Grated zucchini also goes well in place of the spinach in this dish, just make sure to saute zucchini after adding the garlic. You could also do the same thing with thinly sliced broccoli. You get the idea.

I personally love garlic, but you may reduce or increase the amount to your taste. If you find there is not enough olive oil, add some more. Sometimes a touch of butter is also nice.

Try my awesome chicken recipe:
Chicken pieces, place in zip lock bag and pour Italian dressing over...refrigerate over night in marinate.
coat chicken pieces in instant mashed potato flakes (I use Idahoan brand)
sprinkle on paprika, salt and pepper to taste
spray broiler pan with oil, place chicken on and spray chicken...bake 45 min. turning once half way through.
Delicious, easy, browned, crispy company worthy chicken.

Rib Steaks or Pork Chops on the grill or under the broiler.

One of the easiest things to cook is soup. just throw in some meat, veggies and potatoes. put in some water or canned broth, season to taste with your favorite spices and herbs then boil until cooked through. serve with sandwiches or a hearty salad. Everyone likes cake or brownies ala mode for dessert. foodnetwork.com has a lot of great ideas for lunch.

Have a nachos buffet bar.Chips,cheese,cooked ground meat,refried beans and all sorts of salad toppings.That way the ones wanting a lite lunch can do......
