Stir-fried Chicken with Lime and Coconut

It's hard to credit that a recipe as simple and as quick as this could taste so good, but I can assure you it's an absolute winner.

Ingredients
2 Traditional Free Range boneless, skinless chicken breasts


grated zest and juice 1 large lime


5 fl oz (150 ml) tinned coconut milk


1 dessertspoon olive oil


1 green chilli, deseeded and finely chopped


1 dessertspoon Thai fish sauce


4 heaped tablespoons fresh coriander leaves


4 spring onions, cut into 1 inch (2.5 cm) shreds, including the green parts


You will also need a frying pan with a diameter of 10 inches (25.5 cm), or a wok.

First of all chop the chicken into bite-sized pieces and place them in a bowl with the lime juice and zest. Stir well and leave them to marinate for an hour.

When you're ready to cook the chicken, heat the oil in the pan or wok over a high heat, add the chicken pieces and stir-fry for 3-4 minutes, until they're golden. Then add the chilli, stir-fry for 1 more minute, and add the coconut milk, fish sauce and half the coriander and spring onions. Cook for another 1-2 minutes, then serve with Thai fragrant rice and the remaining coriander and spring onions sprinkled over.

Chicken Paprika

– How to Cheat
I recently hit upon this utterly lovely, very classy sauce called Tomato Frito – just pure ingredients melted together, which cuts out having to make a sauce from scratch when you simply have no time. I have a feeling we're going to see quite a lot more of this ingredient, so stock up. Whilst there is the minimum of cooking here, because of the sauce and the ready-roasted peppers, it's all a real doddle – it won't take more than about 15 minutes of your time then leaves you free whilst it cooks happily all on its own. I would serve this with some nutty brown basmati rice and a green salad with a sharp, lemony dressing or, instead of rice, it also goes well with green tagliatelle tossed in butter with a sprinkle of poppy seeds.

Ingredients
4 free-range chicken thighs


1 level dessertspoon hot paprika (Bart's picante pimentón) or 1 level tablespoon ground paprika


1 tablespoon olive oil


1 medium onion, roughly chopped


6 oz (175 g) roasted red peppers from a jar (Karyatis brand), drained and each pepper roughly sliced into 1 inch (2.5 cm) strips


1 clove garlic, finely chopped


? x 560 g jar Heinz Tomato Frito


? pint (150 ml) dry white wine


2 rounded tablespoons crème fra?che


pinch ground paprika, to serve


salt and freshly milled black pepper


Pre-heat the oven to gas mark 4, 350°F, (180°C).

You will also need a small flameproof casserole about 4? pints (2.6 litres) in capacity.

First of all heat the oil in the casserole over a high heat and season the chicken thighs with salt and pepper. Then, when the oil gets really hot and begins to shimmer, fry the chicken thighs to brown them well on all sides; each thigh needs to be a lovely golden brown colour all over. Then using a draining spoon transfer them to a plate and drain away all but about one tablespoon of the fat. Now add the onion to the casserole, turn the heat down and cook for 8-10 minutes, or until they are softened and nicely browned at the edges.

Next return the chicken to the pan with the sliced peppers and garlic, then pour in the tomato sauce, the dry white wine and the paprika. Now stir and bring it up to a gentle simmer, cover with a lid and cook in the oven for 1 hour. Then remove the casserole from the oven. Swirl in the crème fra?che to give a marbled creamy effect, sprinkle with a little paprika and serve straight from the casserole.

Toffee-fudge Bananas with Toasted Nuts

The world record for making this recipe is not five minutes, but just three – it's quite simply the fastest dessert recipe I've ever come across. It's also amazingly good, and if it is conceivable that anybody on this earth does not love delectably thick Greek yoghurt, then you can make it just as well with whipped cream.

Ingredients
2 large, ripe bananas


2 oz (50 g) Brazil nuts


1 lb 2 oz (500 g) Greek yoghurt


5 oz (150 g) molasses sugar


Pre-heat the grill to its highest setting.

You will also need 4 individual serving glasses, each with a capacity of 7 fl oz (200 ml).

Right, on your marks, get ready… Pop the Brazil nuts, spread out on some foil, under the grill about 4 inches (10 cm) from the heat and put a timer on for 3 minutes (if you don't have a timer keep an eye on them, because they will burn if you forget them), then keep them to one side for later.

Now peel and slice the bananas into thin rounds and place them in a large bowl, then add the yoghurt and mix well. Next, divide the mixture between the serving glasses and simply sprinkle the sugar equally over the 4 portions of banana. Now cover with clingfilm and leave in the fridge for about 3 hours – after this time the sugar will have transformed itself into lovely pools of fudge sauce. Now all you need to do is chop the toasted nuts, sprinkle them on top, serve and wait for the compliments.

spagetti is really easy (spagetti meatballs salad and garlic bread), i think baked chicken bone or bonelesss a veggie and maybe ricea roni... what type of disabled would be easier to make suggestions

one courgette sliced. one pot of creme fraishe, half a packet of linguinine. garlic and onion. parmesan

cook courgette in olive oil and boil lin. mix in garlic and onion and then when lin. is cooked add it in. stir cf through top with parmesan cheese and serve.

takes about ten minutes.

cut up lots of veg, peppers, onion, baby corn, add a half packet of stir fry veg and cook. add chinese noodles and two packets of black bean sauce and serve.

same amount of time.


chicken fillets cut up and fry in olive oil, add veggies you like and boil rice, done. (add a sauce if you like)

same amount of time.

Salmon which you can cook in foil in the oven with some oil drizzled over it.Throw some jacket potatoes in the microwave and add them to the oven, again in foil with a little oil and salt to help crisp them up.And a little crisp salad on the side.

Soup you could make with any veg of your choice.Whizz up in the blender, add some creme fraiche and chopped fresh parsley.Serve with some nice fresh rustic bread.

Pasta is easy.The supermarkets sell fresh filled pasta with the pots of sauce to go over them.I find adding a tin of chopped tomatoes too helps it go further.Some garlic bread to mop up the plate goes down well in my house.

Well, I could give you some really easy ones, like grilled
cheese and tomatoes, etc.
But you are saying meals...
A Really Simple One - (Most involve lean ground beef)
We make Is: What we call "Beef Stroganoff":)
Chop up a clove of garlic, fine,
half - to a whole bell pepper, sweet,
One large Onion or two medium size ones
Fry (Saute on low) in frying pan or wok - I use Olive Oil..
Then add 1 lb. of ground beef - 1 1/2 lbs.
One package of Lipton's or other Onion Soup Dry mix,
and some Salt, pepper, Oregano, thyme, even ginger,
to taste..
When meat is brown, drain and set aside...with veggies.

Cook 2 packages of Kraft Dinner and add this to your
meat/veggie mixture In large Serving dish/bowl...

It's easy, affordable, delicious! And I got it out of the Milk
Calendar! :)

ETA: Any chicken, or pork chops, with Shake & Bake,
Grilled, are easy and delicious! And you can bake the
potatoes in oven, too! Keep water running for cleanliness while handling meat and shaking...Add one more veggie, broccoli (steamed) only takes 10 min.'s - or open a can..

Pasta is always good - you can just add a sauce and a few olives (if you like them) and service with grated cheese and garlic bread - mmmmm. Or you can add things like mushrooms, spring onions, peppers etc, to the sauce (from a jar). Another pasta dish is to cook mushrooms in a little butter or margarine and then add a good dollop of Philadelphia cheese (any type) and a little milk to get the consistency you want. Ad the cooked pasta and mix well. Servie withs with a nice green salad - luverlee.

Same goes for rice - substitute the pasta with rice.

Not only are they quick dishes but they can be done at any time and heated in the microwave when needed... enjoy.

Grilled or pan cooked chicken.Try marinading it in Teriakye sauce that can be found in bottles in many supermarkets.or try marinading in lemon juice chopped garlic,or a little olive oil & tarragon. Serve with a jacket spud & salad.

Grilled salmon,when just cooked spread a good dollop of mayo on the salmon back under the grill to brown again serve with a salad.

Cheese nest !
Saute onion, and mushrooms in a little oil or butter (tinned or pre prepared are fine) add a tin of sweetcorn, a tin of garden peas and heat through reducing slightly any excess liquid. Prepare some mash potato (smash is fine but not to gloopy) then line a casserole with the mash creating a "Nest " in the middle, fill the nest with the sweetcorn etc, then sprinkle with grated cheese. Whack in the oven untill it looks good to you then enjoy. Takes no more than 20 mins and all ingredients can be bought pre prepared even the mash! Can be modified with bacon or liver for carnivores.

theres lots of choice. for ease i usually get chicken breasts what ever cheese i have put this on top and wrap bacon round serve with roated veg pepers onions carrots courgetts what ever you like and potato wedges i make my own but bought ones are just as good. chilli is easy i use microwave rice. pork chops mash and beans is easy too.

Bangers and mash with peppered beans and honey carrots - 35min

While it's easy enough to do sausages in the pan, you might find it easier to do them under the grill in the oven - just put them on a rack over a tray to catch any drippings and leave them for 10-15 minutes. And mash - you could peel, chop, boil potatoes in salted water until tender then mash with milk, butter, salt and pepper, or even just peel and chop them, then put them in the microwave in a covered dish with a little water and microwave until tender (I'm guessing 5 minutes plus) - same result and probably easier. Serve with frozen beans microwaved in the same way (covered with a little water) and tossed with salt and pepper, and carrots sliced and cooked again in the same way, then drained and tossed with a little liquid honey. Pork sausages go particularly well with carrots done in this way!

Or rather than mash, just do baked potatoes - scrubbed, pricked with a fork and bunged in the microwave for 6 minutes (turned once so the bottom doesn't go hard - a microwave rack also helps here).

Baked fish with baked pototoes and green salad - 30min

Buy firm white fish fillets, lay out in a single layer in a roasting pan, pour a jar of pasta sauce over them (add anything 'Mediterranean' that you have, eg. dried herbs like basil, oregano, marjoram; cracked pepper, garlic, olives, capers, anything you have onhand BUT it's still fine just with the pasta sauce. Cover the roasting dish with tinfoil and chuck in the oven at 180degC for 20 minutes.
While it's in there, scrub your potatoes, prick and microwave on high as above. Toss a bag of salad greens with wedges of tomato and slices of capsicum (and cucumber and whatever else you want in there - fetta cheese is a winner with this dish!), and salad dressing.

Serve fish with sauce dolloped on top, a potato and a side of salad. Serve butter to go on the potatoes.
This dish would also be good served with spaghetti.

Garlic chilli prawns with pasta - 20 minutes

Boil a full kettle, switch an oven element on, and turn the in-oven grill on to heat (with a tray at the top level) at the same time. Arrange a bag of cooked peeled prawns (can buy frozen) in a single layer in a glass baking or roasting dish. In a bowl, melt a big dollop of butter. Stir a couple of teaspoons of minced garlic (peel and mince it yourself or use bottled stuff), a teaspoon of bottled or powdered chilli, a couple of tablespoons of lemon juice (or zest and juice of a lemon), a big dollop of minced fresh parsley or dried parsley, a little salt and a healthy bit of cracked pepper into this. Pour over the prawns and toss to coat. Leave this while you pour the boiled water into a pot, cover it and bring it to boil again on stove. When it's at a full boil, add a teaspoon of salt and stir your dried pasta into it until it's all covered with water (spaghetti, linguine, fettucine would be best for this). Leave it uncovered for 8-10 minutes (check towards the end for cooked-ness). In the meantime, chuck your prawns under the grill. Toss once or twice while cooking.

When the pasta is cooked, drain it roughly (as in, leave droplets of the cooking water on the strands). Turn the heat off on the element, return the pot to the cooling element and upend the prawns dish into it. Stir prawns through.

Serve in bowls garnished with parsley.

You could do this with diced chicken as well.

steak with mushrooms it's so easy for a main for a starter i would go for some thing simple like melon boat you just slice the melon or melon balls they sell the ball scoops all over and for desert i would do a home made rice pudding you just get short grain rice add milk nutmeg and sugar bang it in the oven until soft bingo its cooked

I take it that the 3 meals could be breakfast, lunch and dinner.For breakfast you could have bread with butter and /or peanutbutter. For lunch, season a piece of fish ( for each person) with cooking oil, light soya source and pepper.Grill in an oven toaster till cooked.Then take the dish out and pour a tablespoon of lime juice over the fish.Place tomatoes,cucmber or other vegetables around the dish.You could have this with bread or potatoes.For dinner,season a piece of meat (per
person with cooking oil,dark soya source( a table spoon) and some dried curry powder.(from supermarket)Grill it in the oven toaster till
cooked.You could eat this with spaghetti, boiled carrots and broccoli.Or you could have the chicken with bread and cucumber.

Do like I do when cooking anything that can freeze, Spaghetti Bolognaise for example, I always make more than needed then freeze three or four portions. If you do this with casseroles, soup even dinners with all the trimmings,it saves time effort and electicity.
