Fried or Baked: Chicken Tender Recipes?!

Answers: I have some split chicken breasts and I am going to cut the breast off and make tenders. Any techniques I should do? Spices?

I'd fry them off.......
Make sure the tenders are completely dry, place them between layers of paper towels and dry them thoroughly
get 3 pie pans or the equivalent:
in pan 1: place flour, about a cup.
in pan 2: about 3/4 cup Italian dressing
in pan 3: your breadcrumbs
TECHNIQUE:
People always season the flour, which is just dusted on......it won't add ANY flavor, trust me, I've done it this way a thousand times.....
Take one tender, and roll it in the flour.
WITH THE OTHER HAND, dip the tender in the Italian dressing till very well coated. WITH THE SAME HAND, dredge in the breadcrumbs, pressing with some force to get them to adhere. Continue until all tenders are breaded.
Place the breaded tenders on a rack (think of a cooling rack for cookies) and place on a baking sheet and into THE REFRIGERATOR FOR ABOUT 45 MINUTES. In the meantime, (remember, you have 45 minutes to kill) make your side dishes, set the table, make salads etc. The 45 minutes in the refrigerator helps the coating stick to the tenders better during the frying process.....It helps "dry" the breadcrumbs so that they brown and crisp to a golden brown.....USE THIS TECHNIQUE FOR ANYTHING YOU PLAN ON DEEP FRYING.....THE REFRIGERATOR METHOD IS A RESTAURANT TRICK THAT ENSURES CRISP OUTSIDE AND A MOIST, TENDER INSIDE.......
After the 45 in the refer, remove the tenders and move to a work surface near the stove. If you want to "oven fry" them, just spray them with cooking spray, place them on a foil lined cookie sheet and bake till golden brown, turning twice (400F oven, middle rack)
If you want to fry them preheat oven to 250 (to keep tenders warm) in a 10-12 inch skillet, preheat 1 inch of vegetable (canola, corn, peanut) oil until hot. Carefully add about 4 tenders at a time (do not crowd the pan) Cook till golden brown, then turn and cook other side.....Drain on paper towels, keep warm in oven and prepare remaining tenders. Serve with sides and your favorite dipping sauce(s)

4 oz. Chicken Tenders
1/4 c Egg Beaters
1/4 c bread Crumbs italian preffered
1 tsp. Olive Oil
1 tsp. Italian Seasoning
Salt/Pepper to taste
Preparation
Heat Oil in small skillet over medium heat.
In Crumbs, add Italian seasoning, Salt and Pepper. Dip Chicken in Egg, then into Crumbs. Add Chicken to Skillet. Cook Until done, turning occasionally.
With whole chicken breasts or chicken tenders, you can either fry or bake them depending on how healthy you want them, with the same ingredients. Make a mixture of flour, bread crumbs, and whatever spices you want in it. Dip it in a beaten egg, then coat both sides with the flour mixture. Next, you can either put in the oven (375 degrees for about 20-25 minutes), or put it in a frying pan with about 1-2 inches of heated vegetable oil, about 8-10 minutes. (The chicken should be submersed in the oil if doing it this way, hence the reference to how healthy you want it.):->

1 cup seasoned bread crumbs
? cup parmesan cheese
1/3 cup mayonnaise
2 Boneless skinless chicken breast cut into tenders
Preheat oven to 425
1. Put bread crumbs in a small bowl or plastic bag
2. Brush mayonnaise onto chicken
3. Coat chicken with bread crumbs
4. Bake for 15-20 minutes or until juices run clear
