Good side dish for scallops?!


Question: I'm making scallops tonight in a butter-wine-shallots- parsley sauce, and I'm trying to decide on a side dish or two.

Suggestions?

A nice risotto or polenta would go well. String Beans with toasted almonds and butter would also be good

Roasted potatoes and spinach..mmmm

A salad and green beans or broccoli.

green fine beans, chargrilled with sesame seeds and sesame oil.

Steamed broccoli

Orzo with sun dried tomatos and dried mushrooms and maybe some steamed asparagras since it is now in season.

rice

angel hair pasta tossed with parsley, parmesean, butter, and minced garlic. With a salad in a light vinagrette.

Rice w/onions rings simmered together in chicken stock.

A salad;

fesh asparagus with butter or cheese sauce;
steamed brocolli; with butter or cheese sauce
steamed cauliflower; with butter or cheese sauce

a mix of cauliflower, broccoli and carrots;
zucchini and squash in a lite white wine butter sauce;

roasted baby red potatoes;
angel hair pasta in a white wine butter sauce;
rice pilaf;

Baked Asparagus with Parmesan

1 pound asparagus
1 tablespoon olive oil - divided use
2 1/2 tablespoons freshly grated Parmesan cheese
1 1/2 tablespoons soft white bread crumbs

1. Preheat oven to 450*F (230*C).
2. Toss asparagus spears in 1 to 2 teaspoon olive oil and arrange in baking pan .
3. Sprinkle with Parmesan cheese and bread crumbs. Drizzle with remaining olive oil.
4. Bake uncovered until asparagus is just tender, about 15 minutes.

Makes 4 servings.
