Leftover mashed potatoes baked in the oven recipe???!


Question: I am not sure if this is twice baked potatoes I am looking for but I have leftover mashies and my sister in law mentioned taking leftover mashies putting cheese on them and popping them in the oven. Any recipes for this? What is it called? What temp do you cook them at?

I usually add a beaten egg ....bacon bits, sour cream, shredded cheddar and seasonings (ie salt pepper) and bake in the oven 350 about 1/2 hour. Kinda like a loaded baked potato.

mashed potato casserole! (sooooooooooooo good,)


4 c. hot mashed potatoes (about 10 potatoes)
1 (8 oz.) pkg. cream cheese, softened
1 egg
1 onion finely chopped
Salt and pepper to taste

Beat all ingredients together. Place in greased casserole dish and bake uncovered at 400 degrees for 20-25 minutes. Serves 8.

Whenever I order a twice baked potato at a restaurant, it's made exactly the way you described it. I don't have a recipe or ingredient suggestion for you, but you definitely have the right item name.

scalloped potatoes

*Potato Filling*

3 cups Mashed potatoes
1 cup Bread cubes
1/2 cup Chopped celery
1/2 cup Chopped onion
2 Eggs
1 tsp Poultry seasoning or thyme

Beat it all together, put in a baking bowl for 30 minutes at 350 F.

Shepard's Pie

1 lbs of ground beef
1 medium onion chopped
2 cloves of garlic chopped
1 can of tomatoes with liquid
Salt and pepper to taste

Brown beef with all other ingredients. Line beef in one layer of a baking dish top with leftover mash potatoes on top. Grate Cheddar cheese on top and bake in oven at 350 until cheese melts and bubbly.

I don't really follow a recipe for this - I just put in an egg, add seasonings and herbs, some breadcrumbs and mix all in with the potatoes. Grate some cheese on top, bake at 350 til heated through and the cheese will be melted.
You can also mix in any leftover cooked veggies you might have.

Yes twice baked.Add a little bit of milk or mayo to the potatoes so they don't dry out.Bake at 350 for about 12 mins,watch for browning...

You can do exactly what your sis suggested, but I think you'd like Texican's idea of a Shepherd's Pie......It's VERY English and both yummy and filling.....perfect way to use up leftovers. I'd give him the 10 points.....

TWICE BAKED POTATO CASSEROLE! Yummy!

I actually just tried this recipe a few weeks ago and it's good, but since your potatoes are already mashed, just eyeball the recipe and add the other ingredients. Enjoy!

It is twice baked potatoes. The first time I had them was at a wedding, it is basically mashed potatoes and then they are put either on their own, or inside a hollowed out potato, back in the oven until the top gets a little brown, so that it forms a slight crust. I would say about 350 should do it. I just made them yesterday

Baked Potato Casserole

Mashed potatos (6)
1 stick real butter
1 C. sour cream
1 C. shredded sharp cheese
6 slices bacon, fried until crisp
Salt and pepper to taste


Place potatos in large mixing bowl. Add rest of ingredients, using half of bacon. Blend together, and place in a baking dish sprayed with Pam. Sprinkle the rest of the bacon on top, and top with additional shredded cheese. Bake at 350 degrees until hot and bubbly.
