EASY CHICKEN FAJITAS

boneless chicken breast
1 1/2 c. water or chicken broth
1 pkg. taco seasoning
2 chopped bell peppers (red, green, or yellow)

Cut chicken breast into strips. Simmer strips in water or broth until just about done.
Place in skillet along with 1 cup cooking water or broth, taco seasoning, and chopped bell peppers.

Simmer until chicken is done and sauce becomes thick. Add remaining water or broth (1/2 c.) and simmer 10 minutes.

Go for a quick and easy stir fry with rice or egg noodles, yummy! That's what i'm craving today :)

How about Indian Chicken curry: fry onions tomatoes, put curry pwdr, salt untill make a paste, put chicken add 1 cup of water, simmer for 20 mins; serve with rice:

Sesame chicken

This is a favorite dish that can be served as an appetizer or part of a dinner combo or just a snack.

You will need:

Chicken pieces or small strips
Sesame seeds
Deep fry batter***
Cooking oil

Wok or deep fryer *350 to *375
If you use a wok please be very careful and watch the temperature of your oil if it starts to smoke turn down the temperature.
First wash your chicken in cold water, then add the sesame seeds to the batter you don’t need as many as you think just a few will look good when done. Mix well add chicken.
When oil is to temp add chicken one piece at a time and cook until chicken floats and golden brown.

*** I tried the deep fry batter that is on this web site and it works good.

If you want to spice it up a bit you can add you favorite hot powder or some dried hot red pepper flakes to the batter. And serve with Chinese red sauce. Enjoy

Pork and apple chops

Ingredients
4 175g pork loin chops
2 tsp English mustard
8oz Bramley apples, peeled, cored and sliced
8oz cheddar cheese, grated
2 tbsp snipped fresh sage or 1 tsp dried
salt and pepper

Method
1. Preheat the grill to high.
2. Place the chops on the grill rack and season on both sides with salt and pepper. Cook for 10-15mins, turning once until browned and cooked through.
3. Thinly spread a little mustard over each chop. Heap the Bramleys, cheese and sage on top.
4. Return to the grill and cook for a further 4 mins or until the topping is golden brown. Serve straight away with creamed potatoes and vegetables.

1 green apple, peeled, cored, and cubed
4 tablespoons fresh cilantro leaves
2 tablespoons fresh mint leaves
2/3 cup plain yogurt
3 tablespoons ricotta cheese
2 fresh green chilies, seeded and chopped
1 bunch scallions, chopped
1 teaspoon salt
1 teaspoon granulated sugar
1 teaspoon crushed garlic
1 teaspoon grated gingerroot
1 tablespoon vegetable oil
8 ounces skinless chicken breasts, cubed
1 ounce golden raisins
Directions
1Place the apple, 3 tbsp of coriander, mint, yogurt, ricotta, chillies, scallions, salt, sugar, garlic, and ginger in a food processer and process for 1 minute. Scrape around the outside of the bowl and process for a few seconds more.
2Heat the oil in a wok or a large pan, pour the yogurt mixture and cook gently over low heat for about 2 minutes.
3Add the chicken pieces and stir well to blend everything together. Cook over a medium-low heat for 12-15 minutes or until the chicken is fully cooked.
4Sprinkle the raisins and remaining cilatro over the chicken. Plate and serve.

Pan Fried Trout With Mediterranean Style Vegetables

Ingredients

8 small or 4 large fresh trout
1 tablespoon onion pepper
Salt
3 tablespoons olive oil
4 sprigs fresh thyme
4 tablespoons freshly squeezed lemon juice.
2 tablespoons clear honey
To complete:
2 cloves garlic, crushed
1lb leeks, washed, trimmed and sliced
1lb courgettes, washed and sliced
1 tablespoon chopped oregano
1 lb boiled potatoes

Method

1. Rinse the trout fillets and pat dry with kitchen paper, Liberally sprinkle both sides with onion pepper and salt.
2. Heat 1 tablespoon of oil in a grill pan and grill the trout for 2 – 3 mins on each side. Add the thyme, lemon juice and honey and grill for a further 2 – 3 mins.
3. Meanwhile, heat the remaining oil in a large pan. Add the garlic, leeks and courgettes and stir fry for 5 – 7 mins.
4. Stir the oregano and serve with the trout and the boiled potatoes.
