I'm looking for a good soup recipe that has ground chicken?!
Answers: My boyfriend is sick and I want to make him soup. I'd like to put ground chicken in it, and have kind of a hearty soup. I can improvise, but I wanted to see if anyone has any good recipes?

Ground Chicken Soup
1 lb. or more ground chicken ( or turkey)
1 zucchini in 1/2 cubes
2 green onions minced
1 stalk celery minced
2 c. mushrooms sliced
1 pkg. frozen spinach ( you can use fresh of course)
6 cups of stock ( if home made, if from boullion pwdr. 4 c. as per inst.+ 2c. water.)
Saute chicken in olive oil in bottom of large heavy pot. Add stock, and balance of ingredients. Simmer till veggies are tender.
season with a little tarragon, thyme and garlic, and of course tons of cracked black pepper.

Chicken Chili
1 # dry navy or pea beans – soaked overnight, rinsed and drained several times
1 medium onion, diced fine
1 # boneless chicken breasts, boiled 20 minutes until cooked
2 14 ? ounce cans petite diced tomatoes, drained
2 cups chicken gravy (packets or canned)
? tsp cayenne
1 T parsley (dried)
Salt and Pepper to taste
In 5 quart Dutch oven, just cover beans with water, add the onion, bring to a boil, then cover and simmer for 90 minutes. Monitor and add water in small increments as necessary.
Meanwhile, shred the chicken between 2 forks, or by hand.
After 90 minutes of simmering, test the beans and onion for tenderness, simmer a little longer if necessary. When the beans are tender, add the chicken, tomatoes, gravy and spices. Add 1 tsp sea salt, and a few grinds of pepper. Return to boil, stirring constantly. Cover, lower heat and simmer 20 minutes. Taste, and re-season if necessary.

simmer chicken in broth or water (about 3qt) combined.
add chopped celery,carrots and onions add garlic (not too much) add a little sage or poultry seasoning and when it is the veggies are almost tender add a cup of rice.
you could add frozen or canned lima beans or corn
salt and pepper. makes enough for a couple of servings depending on the size and the closer you get to the bottom the better it tastes, If he is too sick to eat just let him have broth that you made.
