Differences in olives??!

Question: I went to the store and I saw there is a gourmet olive bar with all sorts of different kinds of olives, different sizes and shapes and I was wondering - what is the difference? Is the taste difference very significant? What type of olives are best to cook with and what sort of food does each fit? Thanks!

Depends on what you are cooking.

I usually use black calamata olives for most Mediterranean dishes. I use Cracked Green olives (not sure what type they are but they are sold as cracked olives) for north African dishes (like Moroccan dishes)

olive salads are amazing you should go try it and see what kind you like the best you can cook with all of them.....great for italian dishes
