Ingredients
2 free-range eggs
125g/4?oz plain flour
150ml/5fl oz milk mixed with 150ml cold water
1 level tbsp grain mustard
salt and freshly ground black pepper
6 fat, herby pork sausages
100g/3?oz thinly sliced prosciutto, pancetta, Serrano ham or thin streaky bacon
3 tbsp dripping or lard
To serve
brown onion and madeira gravy



Method
1. Whisk together the eggs, flour, milk, mustard and seasoning, beating out any little lumps of flour. The consistency should be about that of ordinary double cream, but no thinner. Rest for 15 minutes.
2. Preheat the oven to 220C/425F/Gas 7.
3. Carefully remove the skin from each of the sausages. Wrap each piece of skinned sausage meat in a piece of cured ham.
4. Put the dripping or lard in a roasting tin and leave it in the oven until it is smoking.
5. Pour in the batter - it will sizzle softly in the hot fat - then arrange the sausages in the batter.
6. Transfer the tin back into the oven and bake for 25-30 minutes until puffed and golden.

*** you can leave out the 100g/3?oz thinly sliced prosciutto, pancetta, Serrano ham or thin streaky bacon ***

Maybe pigs in a blanket? or mini hotdogs. maybe you can just put all of them in a sandwhich and eat them

Pork suasage and shallot casserole, with creamy mash potatoes, al e dente veg.

cook the sausages first them cut them up into chunks and throwthem in a tomatoe,onion,herbs sauce and make sausage pasta...my friend you will not be dissapointed. it's dead simple and tastes awesome but please make ur own tomatoe sauce, don't use a jar one!!! lol

Quarter some potatoes or halve some new potatoes, toss in some baby carrots or sliced carrots and a diced onion/green pepper. Add a cup of water, cover and simmer for 20-30 minutes or until your veggies START to get tender. Add in your sausages, cover and cook another 10-20 minutes... I always like to add in a few pats of butter in the last couple of minutes.

To my mind there is nothing,but nothing,better than mashed potato and gravy to go with sausages but you could try a casserole or a sausage and onion pie.

yip there is...remove the skins and mix the sausage meat up in a bowl,add any dried italian herbs you may have,garlic and a little tomato puree if you have any and shape into balls,cook them in tomato sauce or pasta sauce and serve with pasta..lovely alternative

Ingredients
Sausages, usually pork chipolatas
Good streaky bacon
Whatever else you fancy - prunes, apricots, oysters, lardo etc

Method
Wrap the sausage and other filling in the bacon or lardo
Roast for 30 minutes or grill for around 10 minutes

Suggested Sausages
Usually made with a plain pork chipolata but try with anything you fancy. Be creative - add prunes,dried apricot or a even oyster!

PEEL THE SAUSAGES KEEP THE SAUSAGE MEAT AND CAREFULLY MIX IT UP WITH THE MASH POTATO ADD A LITTLE BASIL DRIED IF YOU CANT GET FRESH MAKE THEM LIKE FISH CAKES GET A COUPLE OF EGGS DIP THEM INTO THE RAW EGGS AND COVER IT WITH GOLDEN BREADCRUMBS AND FRY IT BOTH SIDES, HAVE A TIN OF PEAS AND SOME TINNED TOMATOES YOU HAVE YOURSELF A NEW SUPPER

Chop some garlic and some ginger and fry in a little bit of wine. Add some sliced mushrooms, finley chopped onions and some sugar snap peas or mangetout. Add the sausages (chopped) and brown. Transfer to an oven proof dish and add some basil (dried leaves) and a can of chopped italian plum tomato and a can of peeled plum tomato. Bake in the oven for around 25 mins, cook off some spaghetti or some fuseli pasta, remove from the oven, take out the dried basil leaves, tear up some fresh basil leaves if you have them and throw then in and serve! yummy!
