Baked Apple Pancakes?!


Question: i found a really good recipe for baked apple pancakes yesterday but i searched it again and couldn't find the right website. i know the recipe served 6-8 and contained evaporated milk. in this recipe you heated a skillet in the oven, then poured the mixture in, topped it with apples and baked the pancake. can anyone else find this recipe?

INGREDIENTS
nonstick cooking spray
1/2 cup Evaporated Milk
1/3 cup all-purpose baking mix
2 tablespoons granulated sugar
3 large eggs
2 tablespoons orange juice
1/4 teaspoon ground cinnamon
1 medium apple
1 tablespoon cinnamon sugar



DIRECTIONS
PREHEAT oven to 375 degrees F. Spray 10-inch ovenproof skillet lightly with nonstick cooking spray. Place in oven for 10 minutes.
PLACE evaporated milk, baking mix, 1 tablespoon sugar, egg yolks, orange juice and cinnamon in blender; blend until smooth. Beat egg whites in large mixer bowl until soft peaks form; gradually add remaining sugar. Beat until stiff peaks form. Fold milk mixture into egg whites.
POUR batter into hot skillet. Gently push each apple slice about 1/2 inch into batter, peel side up, to form a spoke-like pattern around batter. Sprinkle with cinnamon-sugar. Bake for 10 to 15 minutes or until set. Serve immediately.

6 eggs
1 cup flour
1 cup milk
Directions
1Preheat oven to 375 degreed F.
2Melt butter in an 8 inch oven proof skillet or casserole.
3Saute apples in the butter.
4Sprinkle with sugar and cinnamon, cooking until the sugar is melted and the apples have begun to soften.
5Mix together eggs, flour and milk in a medium sized bowl.
6Pour over the apples.
7Bake for 20-30 minutes or until puffed and done in the center.
8Serve warm with maple syrup.

No I can't exactly find the same recipe in which you are requesting! But I grew up on this recipe for baked apple pancakes my grandma use to to make them every time I was home visiting.

Baked apple pancakes
1/3 cup maple syrup
1/4 cup brown sugar
1/4 cup butter
2 apples, peeled, cored and thinly sliced
1 egg
1 cup milk
1 tablespoon melted butter
1 1/4 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt

Directions:
1. Preheat oven to 400 degrees F. Combine maple syrup, brown sugar, and butter in a 9 inch round baking pan. Put in the oven for about 5 minutes, until the butter melts. Remove and stir to dissolve the sugar.


2. Arrange apple slices, overlapping, over the syrup mixture in the pan. Set aside.


3. Whisk together the egg, milk and melted butter. In a medium bowl combine flour, sugar, baking powder and salt. Pour in the milk mixture and stir until smooth. Pour batter over the apples.


4. Bake for 20 to 25 minutes. Remove from oven and turn out onto a serving plate. Makes 4 to 6 servings.
