What do you regularly cook for dinner?!
btw here's some stuff I cook quite a lot anyway ... chicken curry & rice, lasagne, spaghetti bolognaise, chicken & noodles or chicken & rice, jacket potatoes, pasta with tuna in a tomato sauce, mac n cheese... n if i'm feeling lazy oven chips (fries) with something like pizza or chicken nuggets...
Answers: I'm on a budget as I'm a student & I'm okay at cooking but not brilliant, & need some simple meal ideas for my boyfriend & I, he's quite fussy & doesn't like any vegetables :S

Here are a few ideas
Shepard's or Cottage Pie
Loose meat hamburgers or scrambled cheeseburgers
Make a roast and then have roast beef hash one night for dinner, beef and noodles, shredded bbq beef sandwiches, shredded beef tacos.
Cook a ham, makes several meals- ham dinner, scalloped potatoes and ham, mac and cheese and ham bake. beans or pea soup. ham and cheese omelettes.

A big stir fry is quick and easy especially even if he doesnt like veggies too much. Use his fav meat and seasonings so he wont even mind a few carrots and stuff...
well I know you said your boyfriend doesn't like vegetalbes but have you tried those Contessa frozen meal kits? They are really good and feed about 3 people when you add rice. The Chicken and Beef Stir-Fry are both really good as well as the Chicken Chow Mein. I've heard the Shrimp one is good. It's no more than 6-7 bucks a kit and I love them. They're quick, easy, and cheap. High in sodium but other than that they're really good for you.

One of the quickest and tastiest meals I make is:
Chicken Mince - 500 grams
Coriander - 1 cup loosely packed
1 tablespoon of tandoori cooking paste or green curry cooking paste (this is hotter).
Mix it all together, make into patties and grill/bbq
I serve with a tossed salad on toasted pide bread with yogurt for the tandoori and plum sauce for the green curry.
This is also great to make and freeze for when you come home and just want something quick and easy for dinner.
Buy jars of the different paste, they keep for ages and it is more economical.
I imagine you could use the tandoori for beef or pork mince too.

Hot dogs, sliced thin and fried well done. Add one can drained pineapple chunks, half a diced onion, and a couple of cans of quality pork&beans. Simmer for about 15 min, serve and eat.
TACOS, BAKED CHICKEN, HAMBURGERS
tacos,burritos,since you have a budget try the smart and final type stores in your area they have bulk meals you can divide to individual servings and keep frozen ! this i use on absolute no cook day(s)
but mostly meat and potato's for me !!
Chicken Stuffing Casserole
4 Chicken breasts
Mix 2 cans of cream of chicken soup and 1/2 Cup of heavy cream
Put two slices of swiss cheese each piece of chicken then pour the cream of chicken mixture over it. Then top it with Chicken flavored stove top stuffing. Pour 1 Cup of melted butter or margarine over the whole thing and bake at 350 for 30-45 minutes. SO GOOD!!!
