Roasted garlic vs. Raw garlic?!
Answers: I am going to put roasted garlic in my mashed potatoes for a family dinner tomorrow. I know that roasting it makes the flavor milder. The recipe calls for 2 3/4 T of raw garlic. How much roasted garlic should I use instead?
Roast a whole bulb and cut in half horizontally, and squeeze out the pulp of half, and taste test.
You say a family so I am guess you could user the lot if you are talking about 4 adults.

If your roasting the garlic for a milder flavor then just use the same amount, taste the potatoes and if you want more than add it.

Since you haven't tried the same recipe before, I would stick with the recommended amt of garlic, even though it's roasted. If you have extra, you can taste & add more as needed. Love roasted garlic mashed potatoes! Good luck....

In mashed potatoes, I think that the strong flavor of raw garlic is best.
I put 5 cloves in the microwave, let them cool then squeeze them into the mashed potatoes. Mix well with butter and milk. Don't forget salt AND pepper!
roast the whole head of garlic. add just a little bit, taste it and keep adding it until it meets your taste criteria. you never have to follow a recipe exactly. they're just guide lines.
