Can anyone give me some advice on what main meals I could make that are fast and simple to do for my fella?!


Question: Ok, this sounds tricky at first but it's dead easy:

Poussins (baby chickens)in port and lemon.

Par boil some new potatoes and chantenay carrots, drain and place seperately in a casserole dish with 2-3tbl spoons of good olive oil (not extra virgin). Shred some sage leaves OR rosemary sprigs (finely chopped) and garlic pods (skins on) and mix with the potatoes. Take some sprigs of lemon thyme and mix with the carrots. Drizzle some good honey over the carrots. Season to taste and leave to one side.
Now the poussin. Add to 4-5 tblspoons of olive oil some shredded sage leaves OR fine chopped rosemary, lemon thyme (off the twigs), and chili flakes to another casserole dish (big enough to accomodate both poussins). Add the juice of half a lemon, 1-2 tblsp of honey and the same amount of port or marsala wine as the lemon juice. Again, season to taste. Score the poussins flesh deep across the breasts and massage the mixed marinade into the meat.
Allow to marinate for 1 hour, then stuff non waxed lemon wedges into the spaces around and in between the poussins.
Pre heat your oven to 200 degrees (fan assisted ovens adjust the temp or timing slightly) and put the vegetables in for 10-15 minutes on the middle shelf.
Now put the veggies on a lower shelf and pop the chicken in where the veggies were. The chicken should take 30-40 mins. If you're worried about the chicken burning, rather than caramelising then you can cover with cooking foil for the 1st 20 minutes then uncover to allow the poussins to brown.
Once cooked remove from the oven and the casserole dish and allow to rest. Check your veggies (they should be more or less done( nice and crunchy) and then squeeze the lemon wedges in the poussin dish to release all the liquid into the caramelised liquor, remove the lemon and add 1-2 glasses of port/marsala wine. Cook off the alcohol and then strain into a small saucepan. You can use this as a jus or as a base for a gravy (simply add stock, bring to the boil, then simmer for 5 minutes).
Serve and drizzle the jus/gravy over the chicken...

spagetti is always super easy and just a yummy dinner. Water and pasta, and a can a ragu. You can cut up some italian bread, toast it with some butter and garlic, and then some nice cocktails! haha

Yeah, pasta is the simplest! If you want to get really fancy you could get pre-cooked filled pasta at the grocery store like raviolli or tortellini, etc. Cook it with spicy Italian sausage.

You said he likes most foods so I assume he must like eggs and at least some kinds of seafood, right?

Meatball Sandwiches
Heat frozen cooked meatballs and some frozen peas with a jar of spaghetti sauce. Spoon onto toasted hoagie buns and top with mozzarella cheese slices. Broil about 1 minute to melt cheese.

Chicken Caesar Wraps
Prepare packaged Caesar salad mix and toss with some cooked chopped chicken. Add more Parmesan cheese along with sliced mushrooms and roll up in heated tortillas or soft pita bread folds.

If you want a really nice meal go out and buy a roast, prok or beef.

Put in a glass or metal dish, salt and pepper it and add a bit of water. Cover with foil and bake on GM4 for about three hours. You don't need to check it it will be fine. After the 3 hours remove the foil and put back in the oven for another hour to brown it and then put the foil back on for the final hour.

Yes a long time but oh so tender and flavourful.

Go to Tesco (and yes none other will do) and buy their roasties in the freezer section in the black and silver bag. Grab a squash and a can of corn.

Throw the roasties in a pan and put in the oven for the last hour and the squash also bum side up. Put a bit of water in with the squash to keep it moist. After 50 minutes turn the squash eating side up and add butter to it and bake till done.

If you have a small oven like we do move the roast to the bottom shelf and turn the gas to 7 when you put the roasties and squash in.

It sounds complicated but your actual time in the kitchen is only how long it takes to put these in and take them out and you have one delicious meal when you are done!

Spag bol is my favourite... and oh so simple

(things you need; mince meat, pasta sauce(jar of), dried pasta)

1) put water in pan and put pasta in water, put on low heat
2) fry mince until it's all gone brown (add extra mushrooms or onions at this point if he likes)
3) stir pasta sauce into mince
4) when pasta is done put on a plate, put mince on top

Does he like curry? You could always buy some cooked chicken/meat he likes and use an already convenient jar of Chinese/Indian curry. Place all ingredients in a casserole dish in the oven and VOILA 30 Min's later you have a beautiful 'home made curry.' You could then serve with oven chips or prepacked rice cooked in the microwave.
OR
1lb mince with one of those jars again but this time bolognaise sauce. Throw all the ingredients in a casserole dish and cook in oven on low temp for about 2-3 hours. Again VOILA a 'home made meal' All you have to do is cook the spaghetti. Alternatively you could add a little chilli spice and kidney beans to make chilli con carne and then use the prepacked rice as the accompaniment.

For dessert serve YOU!!!

get ready chopped braising steak
2 tins homepride red wine cook in sauce
button mushrooms
button onions [or chopped large ones]

Put everything in casserole season
cook in oven on medium heat for about 40 to 45 mins

serve with new potatoes and steamed veg selection [in sachets ready to cook]

How about alpine eggs?-simplicity itself and perfect while asparagus is in season. You need (per person) 6-8 ounces asparagus, 2 ounces cheese (Lancashire's best because it's crumbly but grated cheddar will do) and two eggs. Preheat cooker to 180 degs and butter a shallow baking dish. Trim asparagus and cook in boiling water for two to three minutes. Arrange asparagus in base of the baking dish and sprinkle with half the cheese. Break the eggs (carefully so as not to break the yolks) onto the asparagus and sprinkle with the remaining cheese. Bake in the cooker for 12-15 minutes until the egg yolks have set, and serve with crusty bread.

i told you some ideas yesterday keep it simple that's the way to go.or you could do a chicken curry thats so simple

Correct me if i'm wrong bud but didn't we have this poser y'day, i'm sorry 2 have 2 tell ya but ya becoming ever so repetitive of late &, quite frankly it's getting rather tedious, hope ya don't take this personal, take care!.....

simple meal

Ingredients
2 cups white rice, boiled
1/2 cup green lentils, boiled
1 1/2 cups green beans, sliced
1 small potato, sliced(edium thick)
1 egg, fried sunny side up
1 garlic, chopped
1 small dried chili
2 tablespoons soy sauce
vegetable oil, as needed
water, as needed
salt
pepper
1 slice cooked beef (optional) or steak, for decoration (optional)
1 tablespoon goji berries (optional)
Directions
1RICE.
2Wash and drain lentils and rice, then boil them together until its finished cooking.
3EGG.
4Before cooking the vegetables fry up the egg (sunny side up) and season with pepper and salt.
5VEGETABLES.
6Put some vegetable oil in the pan and let it heat up. then add potatoes and beans, the chilli, and some water (approx 1/2 cup) and let it cook for about 10 minutes with a lid on.
7NOTE: keep checking whether it's softened or not and keep stirring after every 4-5 minutes or so.
8Add the seasoning: the soy sauce and some salt (as much as desired).
9DECORATION.
10After setting everything on the plate, put some goji berries (or any other dried berries/fruit) on the rice, as well as 1 or 2 small slices of meat (any cooked meat) on top. (the last bit is optional if you want it totally vegetarian).
11You're done!

chicken a la king

Ingredients
1/2 cup butter
1 green pepper(chopped)
1 cup sliced mushrooms
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups milk
1 1/4 cups chicken broth
2 cups cooked chicken breast strips(cut into cubes)
2 ounces diced pimentos
3 cups cooked rice or toast
Directions
1Melt butter in saucepan, add green pepper and mushrooms cook until tender.
2add flour, salt, pepper, milk and chicken broth, bring to boil stir constantly.
3when mixture thickens add chicken and pimentoes simmer 5 minutes.
4serve over rice or toast.
