Friends over for dinner; something fast and cheap but good?!


Question: Hey I'm having friends over for dinner and I'm in charge of the cooking, I have no idea what to do especially since I'm not even sure that I'll have access to an oven.

Does anybody have a good, easy recipe in mind?

how about some nice starters like olives, stuffed peppers, some bread and olive oil and balsamic vinegar for dipping.
main course could be some pasta with a sauce and some imported real parmesan grated on top. you could also do a salad. just basic lettuce, tomato, grated carrot and feta cheese. get a dressing. dessert could be a bought chocolate cake, tiramisu, ice cream...
it isn't too expensive, but tasty.

Italian noodles
just get some noodles doesnt matter what kind boilthem with some garlic powder and basil, oregano, bay leaves when most the water boils away add like a white ragu sauce sliced tomatoes green pepper bits and crushed olives let it simmer till most water gone. serve with a acorn squash and Italian dish bread and a nice aged grape spritz

hey use the combo of the persons answer above me and mine and it would be great.

why don't you make a huge salad with the following

-crisp green lettuce torn into bite sized pieces
-pre-cooked chicken diced
-dried cranberries
-mandarin oranges
-grape tomatoes (or diced tomatoes)
-black olives
-diced apples
-onions (cut into slices-optional)
-crumbled feta cheese
-croutons

mix everything together and set out several different kinds of dressing.

also put together a meat and cheese platter and serve with ritz crackers (using cheese cubes, pepporoni slices,diced ham/turkey)- this will go great with the salad

or you can make tea sandwiches with cream cheese, ham slices and cucumbers (made these for a baby shower-huge hit). just spread the cream cheese on bread slices, add a slice of ham and a few sliced cucmbers and cut the sandwiches into tiny triangles. make this salad to go with them

orange salad

-1 tub cool whip
-1 (16 oz) tub small curd cottage cheese
-1 package of orange jello (pre-made powder)
-1 can manadrin oranges
-1 cup of nuts (pecan,walnut-optional)

mix all ingredients together and serve!! my kids love this-you can also make a lime version using lime jello and pineapple chunks.

Spaghetti with garlic bread and a salad.

Baked potato bar with different toppings. Let everyone make their own potato. Cheese, chili, butter, sour cream, etc.

CHICKEN TACOS

2 med. onions, chopped
2 tbsp. oil
16 oz. can whole tomatoes
8 oz. can tomato sauce
1 clove garlic, crushed
4 c. chopped chicken
1 1/2 tsp. salt (optional)
1 tbsp. chili powder
1/4 tsp. pepper
12 warm flour tacos

EXTRAS:

Chopped olives
Cheese, grated
Sour cream
Lettuce

Saute onions in oil; add tomatoes, sauce, spices and chicken. Simmer 60 minutes on low. Spoon mixture into a warm flour taco. Add toppings and enjoy.

I made this and it turned out really good....
