Fast and easy meals for one?!
Answers: My bf went on the Atkins so we eat at different times and cook for ourselves. What can I make that's fast and easy and somewhat healthy? I am not a big fan of chicken, but I'm game for everything else.
OK me and my family have been maiking this since I was a little kid and its delicious. Its kinda like taco salad but with a kick. heres what you need:
Bag of plain doritoes.not nacho
lettuce
tomatoe
shredded cheese(cheddar)
salsa
ground beef
1 cans tomatoe sauce
ground beef
brown beef, strain,add tomatoe sauce simmer for 15 min.
ok crumble doritoes on plate add tomatoe mixture then cheese tomatoes lettuce and salsa.......voila!! Its yummy!
Fry up a pork chop, cook some carrots and make a tossed salad. Takes about 15 min. for all.
Er. Canned soup?
Grilled cheese and soup
Pasta with tomato sauce (I make mine with cheese tortilleni) and a side salad
Veggie and rice stir fry
I usually eat vegiterian on the nights when I'm home alone since it's easier and faster
Steak, baked potato and salad.
One pound of lean ground beef. Brown and drain almost all the grease. Saute Rice a Roni in the little bit of grease that's left. Throw a handful of frozen peas in with the water and seasoning. When it's almost done put the browned beef back in and your done! I eat it right out of the pan and refrigerate the left overs right in the pan. Next meal slap the pan back on the stove and re-heat. Of course this is the bacholer way of doing things.

A pork tenderloin stroganoff?
Get some olive oil in a frying pan over medium heat. Put your desired amount of pork/pork tenderloin (sliced in to medallion style slices) into the pan and fry on each side for about 3 minutes.
For the sauce:
Heat 25g butter in a frying pan, when it begins to foam add 1/2 sliced onion and add a pich of about 1/2 tbsp paprika, cook gently for 2 minutes. Add 1 clove crushed garlic and some sliced mushrooms and continue to cook gently for around 4-5 mins.
Add around 125ml single cream and season, cook for a further 2 mins and pour over the pork. Serve hot!!

Cook something in a pressure cooker. Like pork chops or "fried" chicken.
They are super fast. I have one like in the link below and I love it! It saves so much time!
Steak Salad (Ranen Salad)
Ingredients-
1 1/2 pounds beef sirloin steak
8 cups romaine lettuce, torn into bite-size pieces
6 roma (plum) tomatoes, sliced
1/2 cup sliced fresh mushrooms
3/4 cup crumbled blue cheese
1/4 cup walnuts
1/3 cup vegetable oil
3 tablespoons red wine vinegar
2 tablespoons lemon juice
1/2 teaspoon salt
1/8 teaspoon ground black pepper
3 teaspoons Worcestershire sauce
1/8 teaspoon liquid smoke flavoring
Preparation-
Preheat oven on broiler setting. Broil steaks for 3 to 5 minutes per side, or to desired doneness. Allow to cool, then slice into bite-size pieces.
On chilled plates, arrange lettuce, tomatoes, and mushrooms. Sprinkle with blue cheese and walnuts. Top with steak slices.
In a small bowl, whisk together oil, vinegar, lemon juice, salt, pepper, Worcestershire sauce, and smoke flavoring. Drizzle over salad.
