Question: I had salmon for the first time ever the other night. I marinated mine, and served it on a bed of basmati rice, and had a side of green salad with lots of avocado....a real omega 3 hit!

Grilled Asparagus.
Roasted Veggies with a pepper cheese sauce
Dinner Rolls.

Anything with a mild, slighty tangy taste. Think citrus, balsamic vinegar, etc. There is a reason that a lot of people serve a slice of lemon with fish. This is just a modern take on that idea. Here's a recipe that would be great:

as far as pairing other foods, avoid over using anything heavy that will detract from the full flavor of the salmon (it is a very rich fish), like cheese or heavy cream. You want that expensive fish to be the standout in the dinner-the side dish is exactly that: a compliment to the main dish.

i have salmon all the time so try a potatoe or rice.... they always go well

esparagus

Steamed new potatoes, sugar snap peas. (Or any green veg without too strong a flavour).

Hollandaise sauce is best with salmon.

mashed potatoes with butter and olive oil, roasted aspargus or rice pilaf

I think bacon salad would be great. But here are also a couple other ideas:

Spinach-Bacon Salad

1 8oz pkg. spinach
3 hard boiled eggs
8 mushroom caps, sliced
Toasted slivered almonds (optional)

Combine all ingredients and serve with Hot Bacon Dressing.

Hot Bacon Dressing

? lb. bacon, chopped
1 cup sugar
1 1/3 cups white vinegar
5 tsp. cornstarch

Fry bacon until crisp, drain and leave bacon drippings in skillet. Add sugar and vinegar to skillet and stir well. Add 1 cup water and bring to a boil. Mix cornstarch with 2/3 cup water, stir until it dissolves and pour into skillet with dressing. Return to boil and simmer for 5 minutes. Remove from heat, return bacon to skillet and toss dressing into salad.

Cucumber Salad

Slice 2 peeled cucumbers. Slice thinly. Add 1 small sliced or chopped red onion. Cover with bottled red wine vinaigrette dressing. Salt and pepper to taste. Best if you let sit in refrigerator for at least an hour.

Bacon Salad

4 slices bacon
1 lg bowl salad greens
? chopped red onion
Salt
Pepper
Red Wine Vinegar

In salad bowl, combine the salad and onion. Coat with ? cup red wine vinegar, salt and pepper. Chop bacon into little pieces. Cook until crispy. (You may need to add a little olive oil if bacon is very lean). Pour bacon and grease over salad.
Sesame Ranch Salad

1 pkg. salad mix
? cup toasted sesame seeds
6 strips bacon, fried, crumbled
? cup grated swiss cheese

Toss all ingredients together with creamy ranch salad dressing.

Pea Salad

1 10 oz. package frozen baby peas, thawed
1 C. chopped cauliflower
1/4 C. diced green onions
1 C. diced celery
1 C. chopped cashews
1/2 C. sour cream
1 C. ranch dressing
bacon, cooked and crumbled (optional)

Combine all ingredients. Chill. Garnish with crisp crumbled bacon just before serving, if desired.

Rice is always a good choice, also.

Hope you find one or more you enjoy!

How are you cooking and seasoning the salmon? I broil salmon and other fish several times a month, it's our favorite way to have it. This weekend I made broiled salmon with Italian herbs, and I made whole wheat angelhair with garlic and oil, and steamed zucchini with parsley for side dishes. Baked or scalloped potatoes are classic too, and you can do any other veggie you like. Cook minute rice and add fresh chives from your produce section just before serving to make it taste fresh and more homemade.

Forbidden Rice and Greens with Red bell pepper .

I just had salmon for dinner!

I find that citrus compliments salmon well. I had it with some asparagus and orzo with parsley with some lemon squeezed on it.

Try having it with some new potatoes and zucchini or some kind of squash.

sauteed asparagus. Saute asparagus with Olive oil, fresh garlic and salt and pepper. It is wonderful. You can also roast them with them same ingredients in the oven on 400 for about 25 minutes. Good luck!

Personally i like rice of any kind with my salmon...
BUT you should narrow down the choices to you favorite 3 side dishes...
then use iny,miny,miney,moe!!!!

THAT'S all i got.

um...well... rice w/cooked veggies of your choice. or u can have

SQUAM LAKE SALMON FILLET

2 or 2 ? lb. salmon fillet
2 Tbs. Dijon mustard
3 Tbs, dry sherry
1 Tbs. honey
Juice of one lime
2 tsp. olive oil
? tsp. dry tarragon
? tsp. salt

Rinse and pat salmon dry. Place in china or glass dish (not metal). Mix rest of ingredients together and pour over salmon. Marinate in refrigerator 1 or 2 hours, turning every ? hour. Grill or bake skin side down at 400 degrees for 20 to 25 minutes or until filet is firm to touch, basting with leftover marinade. Serves 5 or 6

This is a side dish that I like to serve with salmon!

good luck with your dishes

sauted green asperegus with salt & dille.

also what goes very well with salmon in general is:
1 part dijon mustard, 1 part water 1 part sugar and dille.

boiled quartered new potatoes w/ buter
green bean bundles*
garlic mashed potatoes
herbed basmati rice*

Green Bean Bundles

2 (16 oz) cans whole green beans
8 slices of bacon, cut into halves I use the Center cut bacon
1 tsp. garlic powder, or to taste
1/4 cup melted butter
1/2 cup packed brown sugar

Preheat oven to 325 degrees.
Drain beans and arrange into bundles of 5 beans. Wrap each bundle with 1/2 slice bacon. Arrange seam side down in baking dish with sides not touching.

Sprinkle with garlic powder. Drizzle with mixture of butter and brown sugar.

Bake for 30 minutes or until bacon is cooked through.
Yield: 16 servings
-------------------------------------

Herbed Basmati Rice

1 cup uncooked long-grain (white) basmati rice
1 3/4 cups water
3/4 teaspoon kosher salt
1 tablespoon unsalted butter
2 tablespoons minced fresh curly parsley leaves
1 tablespoon minced fresh dill leaves
1 tablespoon minced fresh scallions, white and green parts
Pinch freshly ground black pepper

Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) Turn off the heat and allow the rice to sit covered for 5 minutes. Add the parsley, dill, scallions, and pepper. Fluff with a fork, and serve warm.

I'd make it a main dish. Baked in parchment paper with some fresh rosemary and butter. Then I'd toss it in some tagliatelle pasta. The sauce would be some heavy cream, fresh garlic and butter and sliced grape tomatoes. YUM. That made me hungry.

Wild rice, sourdough rolls and dill sauce
