There are 3 things you must first think of:
1. Her lies, dislikes, and allergies and intolerance's
2. Budget
3. Time and your cooking ability
That being said you don't have to spend a ton of money and make a gourmet meal. Keep it within your ability, make something she really likes, if your not sure call her mom or a sister and ask them what she really likes or if there is a recipe they have that she really likes and take it from there. How about pecan breaded chicken or tilapia with some steamed veggies or salad and roasted potatoes. Don't forget dessert, thats the best part :)

Steak!

Run over to the grocery store and pick up an already roasted chicken from the deli. They are delicious. The deli also has side dishes and deserts.

Mmmm you could make a chicken cordon bleu....take a chicken breast and wrap it with ham and a little cheese and bake at 350degrees until cooked (about 1hr depending on size of breast)
serve with your favorite veggie's,a salad and some dinner rolls.
For dessert make a fruit pie with your favorite fruit :)

Here are a few really easy recipes that will really impress her! Serve with buttered noodles or rice and a veggie or nice salad. I'll include a few salad recipes, also.

Oven Pork Chops

6-8 medium-thick pork chops
1 can cream of chicken soup (can she have this?)
3 Tbsp. ketchup
1 Tbsp. Worcestershire sauce
1 medium onion chopped

Brown pork chops in a little oil, season with salt and pepper and place drained pork chops in shallow baking dish. In saucepan, combine soup, ketchup, Worcestershire and onion, heat just enough to mix and pour over pork chops. Bake, covered 350 for 50 minutes. Uncover for the last 15 minutes.

Cola Chicken

4-6 boneless, skinless chicken breast halves
1 cup ketchup
1 cup cola
2 Tbsp Worcestershire sauce

Place chicken in 9x13 casserole. Sprinkle with salt and pepper. Mix ketchup, cola, and Worcestershire, pour over chicken. Cover, bake at 350 for 50 minutes.

Tangy Spareribs

5-6 pounds spareribs
1-6oz can frozen orange juice concentrate, thawed
2 tsp Worcestershire sauce
? tsp garlic powder
Spicy seasoned salt
Pepper

Place spareribs in shallow baking pan, meat side down and sprinkle with salt, pepper, and seasoned salt. Roast at 375 for 30 minutes. Turn ribs, roast another 15 minutes and drain off fat. Combine orange juice, Worcestershire and garlic powder and brush mixture on ribs. Reduce heat to 300. Cover ribs, roast 2 hours or until tender and baste occasionally.

Lemonade Chicken

6 boneless, skinless chicken breasts
1 (6oz) can frozen lemonade, thawed
1/3 cup soy sauce
1 tsp. garlic powder

Place chicken in greased 13x9 casserole dish. Combine next 3 ingredients and pour over chicken. Cover with foil. Bake at 350 for 45 minutes. Uncover, pour juices over chicken and cook another 10 minutes uncovered. Serve over hot, cooked rice.

Tangy Pork Chops

4-6 pork chops
? cup Worcestershire sauce
? cup ketchup
? cup honey

In skillet, brown pork chops and remove to shallow baking dish. Combine next 3 ingredients and pour over pork chops. Cover and bake at 325 for 45 minutes.


Taco Salad (omit the cheese)

1lb ground beef browned
1 can of olives, sliced
1 can of kidney beans, drained
lettuce
tomatoes
shredded cheese
Green Onions
Peppercorn ranch dressing mixed with Pace chunky salsa (we like medium)
1 bag of corn chips crushed
Mix all together in a salad bowl.
Yummy!

Great salad ideas:
Cucumber Salad

Slice 2 peeled cucumbers. Slice thinly. Add 1 small sliced or chopped red onion. Cover with bottled red wine vinaigrette dressing. Salt and pepper to taste. Best if you let sit in refrigerator for at least an hour.

Bacon Salad

4 slices bacon
1 lg bowl salad greens
? chopped red onion
Salt
Pepper
Red Wine Vinegar

In salad bowl, combine the salad and onion. Coat with ? cup red wine vinegar, salt and pepper. Chop bacon into little pieces. Cook until crispy. (You may need to add a little olive oil if bacon is very lean). Pour bacon and grease over salad.
