4. In a rush? Smithfield, Hormel, Armour, Tyson have packages of PRE-COOKED beef tips, roast, pot roast, pork roast, chicken, ham, meatload. Use this for your meat dish with a side dish or two of vegetables, rice, or potatoes. You will find these packages near the meat section, they are not frozen. Ask a clerk for help.
5. Tyson's fully cooked whole chickens are delicious. I serve them often with S&W canned sweet potatoes, Stove-Top dressing, microwave chicken/turkey gravy in jars, a canned vegetable, canned cranberry sauce, and frozen Pillsbury Microwave Biscuits which are better than I can make. A frozen pie defrosted and fully cooked. Perfect for one or two people at Thanksgiving or Christmas.
6. Another thing you can do is cook in a slow cooker or a crock-pot. You put the meat into the crock-pot in the morning and it cooks all day long. The meal is ready at dinner time. Crock-pots can be bought at your grocery store, WalMart, Target, etc. BE SURE to read the booklet that comes with the crock-pot.

8. Frozen dinners are always a good choice. Our favorites are Stouffer's, Marie Calendar's, Michael Angelo's, Boston Market's. Just add a side dish, salad, or fruit salad. Desserts can be bought in the bakery section of your grocery store.
9. Ragu Sauces- Italian (in jars, just pour it on).

8 MINUTE STRAWBERRY CHEESECAKE
1 Keebler graham cracker crust
1 (8 oz.) tub Cool Whip
1 (8 oz.) bar of cream cheese
1/2 c. sugar
1 tsp. vanilla
1 pt. fresh strawberries
First cream the softened cream cheese, gradually add in sugar. Add vanilla and whip until fluffy. Fold in Cool Whip. Pour into crust. Garnish with fresh strawberries, blueberries, cherries. Refrigerate for 1 hour, until firm.

FROZEN PEANUT BUTTER PIE-no bake
8 oz. cream cheese
1 c. crunchy peanut butter
2 c. powdered sugar
1 c. milk
1 lg. carton Cool Whip
Mix all ingredients. Add Cool Whip last. Pour into 2 baked pie shells and freeze. Serve frozen.

Good old bacon and egg butties! Can't beat them
Meatloaf is one of my favorite recipes - served with mashed potatoes and whole green beans or steamed baby carrots.
Meatloaf
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand
Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.
My partner likes it when I make him cherry glazed chicken breasts, smashed potatoes or rice and a veggie.
Cherry glazed chicken breasts:
1 can cherry pie filling
4-6 boneless chicken breasts
Heat oven to 350 degrees F. Place the chicken breasts in a glass baking pan that has been sprayed with a non-stick cooking spray like Pam. Spoon just enough of the cherry pie filling over the chicken to cover lightly. Place pan into oven and cook for 1 hour and 15 minutes spreading more of the pie filling over the chicken every 15 minutes.
This is very easy and you get a nice moist chicken breast. This also works well for Cornish game hens and pork chops.

chicken green Chile stew.......it is the bomb. But you have to have REAL green Chile. Like where i live. I hate going to Arizona i have such a hard time finding good green chili. Anyways boil boneless and skinless chicken breast, when they are done shred them apart and in the pan put butter garlic some salt and onion to give the chicken some flavor. After that feel the pan up with water and add some potatoes boil til the potatoes are done. Add some flour or corn syrup to let it thicken a little take it off the heat and let it simmer for about 5-10 min. Oh yeah add your Chile when you put your water in. and add spices to your liken
Here's one I just tried last night. I was inspired by a chicken dish I see at Chili's, Outback, that sorta thing.
I took 3 chicken breasts, brushed bbq sauce on bottom and top (I used Sweet Baby Ray's, but your fave will do). Put them in in a cookie pan lined with foil (less cleanup!) and let them cook for about 30 minutes in a preheated 350 degree oven. Once they were no longer pink inside, I brushed on a bit more bbq sauce, then cut a slice of precooked bacon in half and put it on each breast (i piece, sliced in half = 2 slices per breast). Then I topped it off with a bit of Mexican blend shredded cheese and popped back in oven til cheese was melted.
I served this with a box of scalloped potatoes. I followed all the directions on the box, but added half a packet of dry ranch dressing mix with the other ingredients of the sauce mix. Also, after letting them cook as per the box, I topped it off with some of the same cheese I used for the chicken and put it back in until melty too.
I also put a can of green beans with about 1/4 cup of italian dressing in a sauce pan on the stove too. Bring to a boil, then simmer for about 10 minutes.
All in all, I was in the kitchen about 10 minutes to prepare everything, then took a 30 minute break and came back to spend another 10 just to finish it all up!
Stuffed Peppers
Mine are stuffed with a beef and pork and rice mixture then slowly braised in a tomato sauce. To this, I add a whole package of fresh string beans, topped and tailed as well as large quarters of peeled king edward potatoes. Braise for three or four hours in a heavy cooking pot [I use a ceramic lined cast-iron pot] tightly covered in a slow oven (300F - 325F or gas mark 2/3).
I end up with a richly flavoured set of stuffed peppers with sides of green beans and potatoes and a wonderful gravy to serve over all.

I like to experiment with healthier ways to eat pasta that's not so heavy with cheese. One of my recent favorites is to saute' onions, green peppers, mushrooms and shrimp, scallops, or chunks of salmon in 1/4 cup olive oil seasoned with garlic, sea salt and pepper. At the end of the sauteing I add a tablespoon of Smart Balance or other healthy butter spread, dump in hot pasta (spaghetti or penne) and toss to coat. Of course, you could use real butter if you like.
I have lots of favorite dishes.

BROCOLLI CASSEROLE
2 BOXES FROZEN CHOPPED BROCCOLLI DEFROSTED
1 CAN CREAM OF MUSHROOM SOUP
3/4 CUP SOUR CREAM
1 CUP CHOPPED CELERY
1 TEASPOON SALT
1/2 CUP SHARP SHREDDED CHEDDAR CHEESE
COMBINE AND BAKE AT 350 DEGREES FOR 30 MINUTES
U CAN BAKE 2 CASSEROLES AND SERVE ONE AND FREEZE ONE
AND THEN PUT IN OVEN FOR SPECIAL OCCASSION

md style crab cakes
jumbo lump crab preferrably but whatever kind of crab you have (not imitation please)
1/2cmayo
1/2cbreadcrumb can be fresh
tbsp parsley
1 egg
2 tbsp butter
1 tsp of old bay
1 squirt of fresh lemon
mix the following together in a bowl with your barehands trying not to break the crab pieces too much..
you can either fry them or I prefer to broil them
you can serve as a sandwich on a hamburger or kaiser roll with Lettuce, tomato and mayo on it and a pickle on the side
serve with a mayo based coleslaw and steak fries
Beef Rouladen
Ingredients:
* 1/4 cup Dijon mustard
* 8 slices top round steak, 1/4 inch thick (about 2 pounds)
* Salt and pepper to taste
* 8 bacon strips
* 1 large onion, cut into thin wedges
* 3 tablespoons vegetable oil
* 3 cups beef broth
* 1/3 cup all-purpose flour
* 1/2 cup water
* Chopped fresh parsley, optional
Directions:
Lightly spread mustard on each slice of steak; sprinkle with salt and pepper. Place 1 bacon strip and a few onion wedges on each slice; roll up and secure with wooden picks. Brown in a skillet in oil; drain. Add broth; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until meat is tender. Remove meat and keep warm. Combine flour and water until smooth; stir into broth. Bring to a boil, stirring constantly until thickened and bubbly. Remove wooden picks from meat and return to gravy; heat through. Sprinkle with parsley if desired. Yield: 8 servings.
canned tamales and cheesy chili....
1 lg. can Hormel beef tamales
1 lg. can Armour chili with beans
1 pkg. shredded cheddar cheese
OVEN directions:
Line tamales in cake pan (remove wraps first). Pour chili on top. Bake at 350 for about 15 minutes, add entire contents of bag of cheese to top. Bake an additional 5 minutes or until cheese is melted.
MICROWAVE directions:
Line tamales on microwave safe plate (keep the wraps on). Microwave on high for 3 minutes or until hot, remove skins/wraps now, set aside. Pour chili into a microwave safe bowl, microwave on high for 2 1/2 minutes or until hot, pour on top of tamales. Add entire contents of cheese.
ENJOY!!!
NOTE: This is very good with tortilla chips for dipping also! My kids absolutely love this for dinner sometimes, and it is so quick and easy, you will waste no time at all!!!!
Chicken Bake
3 boneless chicken breast
4 cans mixed veggie Drained
3 cans chicken gravy
2 boxes chicken stove top stuffing
Boil chicken until done, cut into small pieces. mix with veggies and gravy, pour into glass bake pan. Make stuffing as directed on box spoon on top of chicken mixture. Bake at 350 for 35 to 40 minutes.
Poor Mans Steak
3 lbs ground beef
2 cans brown gravy 1 large can cream of mushroom soup
Make 4 large patties and bake until done, drain. Mix soup and gravy and pour over patties, bake at350 for 30 minutes. Serve with mashed or boiled potato's
