Question: I like spicy and hot but not so spicy that you cant taste the Chili . I CAN cook , as long as there are directions on the box , so I'd like some help on a good chili recipe

1 lb Ground beef or pork browned and drained
1 cans Dark red kidney beans
1 cans Brown beans
2 14 1/2 ounce Cans diced tomatoes
1 Small onion
1 Green pepper (chopped)
1 Red pepper (chopped)
2 Hot red pepper (optional)
2 cloves Crushed garlic
3 tbsp Chili powder
1 tsp Dried red chilis (optional)
1 tsp Pepper
1 tsp Cumin
Salt to taste

Preparation
Put all ingredients in crock pot. Stir to combine. Cover and cook for 8-10 hours on low (high: 3-4 hours

Hey Will, I like this recipe because it's the best basic chili recipe I've used, but also you can always add your "own love" to it! I would ditch the biscuit bowl part myself, but the rest is easy and simple. I don't like my Chili over spiced either, I want to taste it all, blended well with every bite smooth, delicious and well balanced. Hope this helps you out today!

Chili in a Biscuit Bowl Recipe courtesy Paula Deen

Vegetable oil cooking spray
2 cups biscuit baking mix (recommended: Bisquick)
2/3 cup whole milk
1/2 teaspoon cayenne pepper
Flour, for dusting the work surface


1 pound ground chuck
1 medium onion, chopped
1 medium green bell pepper, chopped
2 (14-ounce) cans Mexican-style stewed tomatoes
1 (15-ounce) can kidney beans, drained and rinsed
2 tablespoons chili powder
1 teaspoon salt

Toppings:
Shredded sharp Cheddar
Sour cream
Sliced green onions (white and green parts)
Corn chips

Preheat the oven to 450 degrees F. Invert a muffin tin and spray the underside with vegetable oil cooking spray.

Stir together the baking mix, milk, and cayenne. Shape into a ball. Turn out onto a floured surface and knead 3 or 4 times. Divide the ball into 6 pieces. Roll each piece into a 6-inch circle. Place a dough circle over the back of each muffin cup. Press around the cup to form a bowl shape. Bake for 10 to 12 minutes, until lightly browned. Let cool slightly. Remove the biscuit bowls and reserve.

Brown the ground chuck over medium heat in a Dutch oven. Add the onion and green pepper and continue to cook until the meat is completely browned and the vegetables are tender. Drain off any fat and discard. Stir in the tomatoes, beans, chili powder, and salt. Bring the mixture to a boil, cover, and reduce the heat to low. Simmer for 35 minutes.

When ready to serve, spoon the hot chili into the biscuit bowls. Garnish with shredded cheese, sour cream, sliced green onions, and corn chips.

You cannot go wrong with either the "2 Alarm Chili Kit or Carroll Shelby's Kit.

A spicy, savory chili with pork sausage and beef. The addition of nutmeg, cinnamon and cumin among the seasonings is an interesting flavor.


Ingredients

1 c Pinto beans,dried
5 c Water
2 T Lard
1 T Bacon drippings
1 Onion
12 oz Pork sausage,country-style
1 lb Beef,coarse grind
4 Garlic cloves
1 t Anise
1/2 t Coriander seeds
1/2 t Fennel seeds
1/2 t Cloves,ground
1 Cinnamon stick,ground,1"
1 t Black pepper,freshly ground
1 t Paprika
1 Nutmeg,ground,whole
1 t Cumin
2 t Oregano,dried,pref. Mexican
4 T Sesame seeds
1 c Almonds,blanched,skins remov
12 Red chiles,whole dried or
1 1/2 c Chile caribe
1 1/2 oz Milk chocolate,small pieces
1 cn Tomato paste(6oz ea)
2 T Vinegar
3 t Lemon juice
1 Soft tortilla,chopped
Salt




Instructions

1. Place the rinsed beans in a bowl, add 2 to 3 cups of water and soak overnight. Check the beans occasionally and add water as necessary to keep them moist.


2. Pour the beans and the water in which they were soaked into a heavy saucepan and add 2 to 3 more cups of water. Bring to a boil over medium-high heat, then lower heat and simmer, partially covered, for about 45 minutes, until the beans are cooked but still firm. Check occasionally and add water if necessary. Drain the beans, reserving the cooking liquid.


3. Melt the lard in a heavy skillet over medium heat. Add the beans and lightly fry them in the lard. Set aside.


4. Melt the drippings in a large heavy pot over medium heat. Add the onion and cook until it is translucent.


5. Combine the sausage and the beef with all the spices up through the oregano. Add this meat-and-spice mixture to the pot with the onion. Break up any lumps with a fork and cook, stirring occasionally, until the meat is very well browned.


6. Add the reserved bean-cooking liquid to the pot. Stir in all the remaining ingredients. Bring to a boil, then lower the heat and cook, uncovered, for 1/2 hour longer. Stir occasionally. Add water only if necessary to maintain the consistency of a chunky soup.

I like my Dad's recipe,and since hes been Dead for ten years I'll tell you.(I'm sure he wont mind,and it did win one chili cook off)
1lb.Ground beef(or more if you like)(you can also substitute steak pieces...if your rich)
4 to 6 cans of red kidney beans(12 oz)
1-2 cups sliced bell peppers
1-2 cup sliced onions
1-2 large cans of Hunts tomato sauce(depending on how soupy you like it)
1-2 cans of tomato paste(makes it stick and thick)
Chili Powder(as much as you like)
1-2 Cans of stewed(or chunky cut) tomatoes(normal/without seasoning...like Italian etc)
Jalapeno peppers(optional)
And the secret for making all the flavor mix together
1-2 decent sized Bay Leafs(remove upon finishing)
Start with browning the ground beef(beer optional also)drain.
Add the tomato sauce and paste,to the point of bubbling/boiling,turn down the heat to simmer,add bay leafs and other ingredients and let simmer for at least two to four hours,stirring every so often to prevent burning.

When you cook chili .. and it is not too spicy .. add rotel tomatoes .. it's an ingredient which will make your chili great.

2lb's hamburger fully cooked
1 15oz can great northern beans
1 15oz can black beans
1 15oz can pinto beans
1 15oz can red kidney beans
1 10oz can of diced tomatoes and green chilies
1 onion chopped or not if you don't like onions
add water to thickness that you like
half package of McCormick(original) chili seasoning
simmer for about 30 minuets

*rinse beans before adding to your cooked hamburger add all other ingredients. you can add what ever you like it is a good recipe to play around with and "easy" it is a very pretty chili with the different color beans. its even prettier if you use chopped green onions instead of white onions. some cans of beans and "tomatoes and green chilies" are a little larger or smaller than 15oz that's ok. what I have found is if I try to make a recipe exactly the way it says it never turns out. have fun with this one, its a little spicy.

I like Dennison's Chile allot especially with Spanish rice and corn tortilla.
I also make it myself but I don't use any specific recipe I just go with the flow and add whatever I think sounds good at the time.

Cilantro makes it taste good though.
