How do you keep muffins from cracking on top?!


Question: They must be baking too close to the top. Cracking happens when then heat is so high it makes a skin before it has time to rise all the way which is VERY fast in a muffin...Odds are you are following a recipe so have the heat on the right temp so the only thing left is where it is in the oven.

Never over-mix muffins...they should be under mixed if anything.

Brush lightly with butter before baking.

Slower baking (lower temperature). But I think it adds to the homeyness of their look.
