One chicken leg, what can i do for dinner?!

Make chicken soup! Season it w/ S&P, brown in a little oil in a pot. When brown (won't be done all the way thru), add 3 cups water or chicken stock, plus carrots, onions, celery, black pepper. Simmer until chicken is done; take meat off bone and return to soup. Add a handful of egg noodles or other pasta that will fit on a spoon and when they are done, you have soup to make you both feel better!

put it in the slow cooker with some canned Mexican or Italian flavored tomatoes and shred it and make burritos

Put it in a pot and add a couple cups water to cook it. Take out chicken and shred.
Add 1 Can cream of chicken and a few uncooked biscuits torn into 1/4ths. Boil til biscuits drop to bottom.
You might need another cup of water, just keep checking it.
Should be creamy/soupy texture.
Salt and pepper!

This is a favourite of ours - halve it and the amounts should be about right. And perhaps skip the chilli, or go easy on it, if you're feeling a little under the weather. Is total comfort food though.

Spicy Chicken
Serves 4

1kg chicken pieces, eg. thighs and drumsticks
1 onion, peeled and sliced
1 clove garlic, peeled and sliced
2 tbsp each chicken seasoning and coriander
? tablespoon cumin
1 tbsp paprika
1 red chilli, deseeded and chopped
Juice of one lemon (I use 2 but I like mine very lemony)
2 tbsp soy sauce
8 sprigs thyme, and more to garnish (I just use dried)
2 tbsp sunflower oil
2 tbsp muscovado or granulated sugar
500gm potatoes, cut into 5cm pieces
2 carrots, cut into 3cm pieces
600ml hot chicken stock

Pierce each chicken piece in several places. Place in a sealable container and sprinkle with all the ingredients up to and including the thyme (I used dried thyme which worked perfectly well). Shake or stir thoroughly until well combined and the chicken is well coated. Leave in fridge for half an hour or overnight.

Heat the oil and sugar in a heavy-based casserole (a big heavy pot did the job!) over medium heat, stirring, until the sugar is dark golden brown. Add the chicken immediately, reserving the onion and marinade, and brown for 5 minutes, turning as needed.

Add the onion, marinade and veggies, and cook stirring for 10 minutes. Add the chicken stock and stir thoroughly. Cover and simmer for 25 minutes, stirring occasionally. Remove lid and cook for a further 10 minutes to allow the gravy to reduce a little.

Serve garnished with sprigs of thyme.

Notes: the carrots weren’t in the original recipe, but were very good – any root vegetables eg. parsnip or celeriac would do well in this I think. Worth adding extra veg – the flavour is fantastic, and good to balance out the meat/veg proportions.

Chicken Noodle Soup is always a fav. when not feeling well...or how about a stirfry with the chicken meat (off the bone) and assorted veggies. Serve on rice, some soy sauce, etc.

Just follow our 3 simple steps




1 TOSS 1/4 cup Kraft Zesty Italian Dressing with 1 lb. red potatoes, cut into wedges and 2 cups each whole baby carrots and green beans. Place in foil-lined 10x15-inch baking pan.


2 MIX 1/2 cup Kraft 100% Grated Parmesan Cheese with 1 pkg. Shake'n Bake Original Coating Mix. Coat 8 chicken leg/thigh quarters according to package directions. Place on top of vegetables.


3 BAKE at 400°F for 40 min., or until chicken is cooked through and vegetables are tender.

If the both of you have a bug, keep it light.Boil it, add a container of chicken broth,some sliced carrots,celery,and rice.Salt and pepper to taste.Have a nice hot bowl of soup.

Well you can warm up the chicken leg in the microwave or oven. Then you could make some mashed potatoes and green beans on the side. This is a yummy easy and healthy meal. Enjoy, Miley

Chinese Chicken Soup!
Stew your chicken leg in some chicken broth (if you got it, water if you don't.)
When the chicken is cooked, pull the chicken meat off and put it back in to the soup.
Put some mushrooms in (oyster mushrooms are actually medicinal for colds!).
If you like, you can crack an egg in there to make 'egg clouds'.
Just before serving, add some scallions.

The chicken soup and mushrooms will probably cure your bug...;-)
