Making Stuffed Peppers for dinner, what should I serve on the side?!

Small side of pasta and a salad goes very well.

I have usually have macoroni because I have kids and green beans.
We have mashed potatoes and green beans or another type of green veggie.
Sweet white corn with butter, salt pepper. Maybe some rice or mashed potatoes as well.
sounds weird but when I was little my mom used to give us mashed potatoes with some of the red sauce on them or the thin egg noodles with sauce

If you make your filled peppers with hamburg and tomato sauce, a pasta always balances the dish. If you make them with breading or rice only you could add a piece of chicken or fish.
A tossed green salad will go with both types.

Any kind of simple steamed veggie - string beans or carrots come to mind as they will have a fresh natural sweet flavour that doesn't conflict with the peppers. And a good old-fashioned butter rich mashed potato is my favourite choice for a meal like this.
This may not help tonight, but here is a suggestion for the future. I don't know how you cook your peppers, but mine are stuffed with a beef and rice mixture then slowly braised in a tomato sauce. To this, I add a whole package of fresh string beans, topped and tailed as well as large quarters of peeled king edward potatoes. Braise for three or four hours in a heavy cooking pot [I use a ceramic lined cast-iron pot] tightly covered in a slow oven (300F - 325F or gas mark 2/3).
I end up with a richly flavoured set of stuffed peppers with sides of green beans and potatoes and a wonderful gravy to serve over all.

1 (15 ounce) can whole kernel corn, drained and 1/2 liquid reserved
1 (14.75 ounce) can cream-style corn
2 eggs
1 (8 ounce) package dry corn bread mix
1 cup sour cream
8 ounces Cheddar cheese, shredded
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking pan.
In a large mixing bowl, combine corn, reserved liquid, eggs, corn bread mix and sour cream; stir until blended. Pour batter into prepared pan; sprinkle with cheese.
Bake in preheated oven for 30 minutes, until golden brown.
