RANCH HOUSE BREAKFAST IN A SKILLET

6 slices bacon
1 (12 oz.) hash browns with onions
6 eggs, beaten
1/4 c. cream
1/2 tsp. salt
Dash pepper
2 c. grated cheese

Cook bacon until crisp. Brown hash browns. Combine eggs, cream, salt, pepper, pour over potatoes. Sprinkle with cheese and crumbled bacon. Cook for 10 minutes.

Here is a quick and yummy breakfast: toast a few waffles, top with sliced strawberries and a little whipped cream. Add some bacon or sausage on the side. Yummy!

One of my favourite special breakfasts is pancakes, layered with yoghurt, jam and banana.

So basically you make your pancake, then once on the plate, you put a layer of jam, yoghurt and banana, then top with another pancake etc.

If you're looking for something less fiddly, I'm guessing your mum would just appreciate the fact that you're trying to amend things between you and being thoughtful enough to make her brekky, so I'd stick with something easy like scrambled eggs on toast - or something you know you're good at that you know she likes!

Lovely -- make her pancakes (banana macadamia.... her favorite) or her fav omlette (spinach & goat...). I am sure the gesture itself will do the trick!

breakfast, scrambled egg with smoked salmon. fresh orange juice squeezed

pasta, for sauce, cook pancette, big dollop of creme fraiche, spoonful of pesto, dollop of cream, tiny bit of olive oil

serve with parmesan.

chicken cooked with mozzerella inside with pancetta on top of the chicken server with spinich and roasted new potatoes.

Fratatta
One skillet meal...easy
Peel potatoes and grate with food processor or hand grater
Heat oil in heavy skillet
fry potatoes like a big pancake
add eggs whipped on top
add meat, vegs, cheese to your taste
cover and cook over low heat till eggs have set up
Good luck.

Why not make it tonight?

"Overnight French Toast"

Boil 1/4 cup brown sugar, 1/4 cup corn syrup and 1/2 stick butter, pour into a pie pan. Sprinkle with nuts and raisins.

While this is cooling, slice some baguettes into 1 inch thick slices and arrange on the sugar mix, pack them in.

Mix 4 eggs with 3/4 cup of 1/2 & 1/2, 2 tbls sugar, 1 teaspoon vanilla extract. Pour over the bread. cover with wrap and put in the fridge, Good night.

In the morning, set over for 375 degrees, when heated put pan in the oven on a cookie sheet, and bake 35-40 minutes. Let sit 5 minutes and carefully invert onto a plate, share and enjoy.

While it is baking yuo could make bacon or sausage or fruit salad; whatever you like on the side. Put up a pot of coffee, then wake your mom up and relax.

A Breakfast Quiche ?

Par bake your pie shell(store bought) for 5 mins at 350
place..cooked sausage, crumbled bacon ,onions and cheese in the pie shell
combine 3/4 C milk with 4 eggs and Salt& pepper(it is best to use a blender) pour egg mixture into pie shell ...bake at 350 for 30 mins or until brown and puffed...

This is easy and really tasty. My two sons and husband loved these bisquick blueberry muffins.......http://www.recipezaar.com/117370
To save time you can also buy bacon that is precooked.
Just microwave the bacon while the muffins are baking, and serve with a glass of OJ. You can make the batter tonight to save time.

Breakfast sandwiches: in a small bowl, spray with nonstick cooking spray, crack and scramble one egg in bowl. Microwave for one minute. Meanwhile, toast an english muffin or bagel in the toaster. Or, you could use a buscuit or cressant roll instead. Butter the bread/toast of choice; top with the egg from the microwave and a slice of cheese. You could also add a slice of heated up ham if you'd like.
