If you want simple, you cannot get any easier than Oreo Truffles.

OREO TRUFFLES


1 Package Oreo cookies, Finely Crushed
1 (8oz.) Package Whipped Cream Cheese
1 Pkg Wilton’s Dark Chocolate pieces (Buy at Any Craft Store)
1 Pkg Wilton’s White Chocolate Pieces, or any color (optional)

1. Crush the Oreo cookies in food processor or blender.

2. Mix the crushed Oreo cookies with the whipped cream cheese until it forms a solid ball. (Blends best if you use your hand instead of a spoon).

3. Form the mixture into 1 inch balls, or any size you like.

4. Put the balls into the refrigerator for at least 30 minutes or in the freezer for at least 10 minutes.

5. Melt the entire bag of Wilton’s chocolate either in a double boiler or the microwave for 1-2 minutes. Do not add butter to the chocolate when melting.

6. Roll the oreo balls in the chocolate and place on rack to dry. Work quickly, one ball at a time, because the chocolate hardens fast! Re-melting the chocolate may be necessary about halfway through.

7. Decorate the tops with the second color. To decorate the truffles with the second color, you can use a Ziploc freezer bag as a small pastry bag. Put the melted chocolate in the Ziploc bag. Cut the corner of the bag and use the bag to pipe the second color on top of the truffles.

NOTES:

– Wilton’s also makes tools for handling the dipping and rolling of the truffles. You can also use a meat fork (two prongs). It is best not to use a regular fork.

– Instead of using a second color as decoration, you can reserve some of the Oreo crumbs in which to roll the truffles. Alternatively, you could roll the truffles in cocoa powder.

Buy a cardboard carton of plain chocolate wafer cookies. Follow the recipe on the box. You just slap them together with whipped cream and then cover the 2 rolls with whipped cream and refrigerate. Slice on the diagonal for an impressive striped look. Moist and delicious and 2 ingredients.

The one I made was regular cinnamon sticky rolls and it used the biscuits that you buy in the roll in the dairy section of the store. It was great and everyone loved it! Make sure you serve warm. This is just a variation of that recipe! They are very easy to make!

Easy Apple Cinnamon Rolls

1 teaspoon ground cinnamon
1/2 cup granulated sugar
1 tube (8 ounces) crescent rolls
2 large apples, peeled, cored and cut into 8 wedges each
2 tablespoons melted butter
1/4 cup water

PREPARATION:
Preheat oven to 400°. Combine cinnamon and sugar; set aside. Unroll crescent roll dough; separate into 8 triangles. Cut each triangle in half lengthwise to make 16 triangular strips. Place an apple wedge on the wide end of each strip; roll up. Arrange the rolls in a 9x13-inch baking pan.

Drizzle with the melted butter then sprinkle with cinnamon-sugar mixture. Pour water into pan, but not over the rolls. Bake for 30 to 35 minutes, or until golden brown and apple wedges are tender.

Fresh Fruit Pavlova recipe
ingredients
3 egg whites
175 g (6 oz) caster sugar
1 teaspoon cornflour
1 teaspoon vinegar
1/2 teaspoon vanilla essence



For the filling
300 ml (1/2 pint) double cream
2 bananas, sliced and brushed with lemon juice
2 kiwi fruits, peeled and sliced
100 g (4 oz) green grapes, halved and deseeded
2 oranges, peeled and segmented


method
1. Mark a 20 cm (8 in) circle on a piece of non-stick baking parchment and place on a baking tray.

2. Whisk the egg whites until they stand in stiff peaks. Gradually whisk in half the sugar. Fold in the remaining sugar with the cornflour, vinegar and vanilla.

3. Spoon or pipe the meringue on to the marked circle and bake in the centre of a cool oven for 1 hour. Leave to cool in oven.

4. Remove paper and place on a plate. Whip the cream until stiff. Spoon over the pavlova I base, arrange the prepared fruit on top and chill before serving.

To pipe meringue, use a large piping bag fitted with a large plain nozzle.

Lots of calories but once in a while does not hurt we all love a treat, and you can load with all sorts of fresh fruit on top......Enjoy your meal............

banana pudding

totally easy you can make it with jello pudding you just add milk to. Use vanilla pudding about 2 boxes

get some cold milk ready
just follow the package instructions on the box its really simple just don't forget the milk!

mix up the pudding(s)

next take some Nilla wafers and add them to the bottom of a serving pan or dish in a layer next add some pudding to the top just about half of the mixture..add a layer of fresh bananas sliced, and half a container of cool whip, then top with more Nila wafers, then the rest of the pudding and some sliced bananas and spread the cool whip on top. For a garnish crumble up the rest of your nila wafers and sprinkle on top..make this the night before and the cookies Will NOT be hard..it is sooo good!!

you'll need
2eggs
1 cup sugar
2 sticks butter [room temp]
1 cup chopped walnuts
1 cup chopped dates
1 tsp baking powder
1/4 tsp salt
1 cup flour

combine eggs, sugar and butter. fold in walnuts and dates, set aside. mix flour, baking powder and salt, fold in the nut mix. bake at 350 degrees. it's done when it does not stick to a toothpick.

What about a cheesecake? I know it's a cake, but everyone is always very impressed with a delicious cheesecake! This blood orange cheesecake is unique and super easy. Just remember to soften the cream cheese well. Also, you can use regular oranges instead of you can't find any blood oranges.

Crust Ingredients

1 3/4 cups vanilla wafer crumbs
1/4 cup chopped walnuts
1 teaspoons ground cinnamon
1/2 cup butter or margarine, melted

Filling Ingredients

3 eggs
1/4 teaspoon salt
1 pound cream cheese, at room temperature
1 cup sugar
2 teaspoons vanilla extract
3 tablespoons blood orange zest
4 teaspoons fresh blood orange juice
3 cups sour cream

Preparing

Preheat the oven to 375°F.

In a bowl, mix together all the crust ingredients, then press on the bottom and sides of an 8 or 9 inch spring form pan.

In a large bowl, beat the eggs, salt, cream cheese, sugar, and vanilla extract until smooth. Blend in the zest, blood orange juice and sour cream. Pour the filling into the prepared crust and bake for 35 minutes, or until a knife inserted into the center comes out clean.

Blood Orange Glaze Topping

3 tablespoons blood orange zest
1/2 cup fresh blood orange juice
1 tablespoon cornstarch
2 tablespoons granulated sugar
Peeled and cut segments of one blood orange

Combine all ingredients and put into small saucepan. Boil and stir until thickened. Gently add orange segments and stir until well blended. Cool; then pour on top of cheesecake. Refrigerate cheesecake for 3 hours.

Only thing: I'd really suggest a double-boiler for melting the chocolate, and mixing the cool whip in. You can get it almost anywhere; it looks like a pot inside a pot, and you put water in the larger or the lower one, let it boil, then add chocolate to the smaller or the top one, let it melt, and slowly add the cool whip until you have a smooth texture.

There are a lot of ways you can change it, too, to personalize it or meet the tastes of the people you know - you can line the crust with fruit or add it in the center, you can swirl in different types of chocolate, you can use any type of chocolate there is, add nuts or mint or change the ratio of chocolate to whipped cream to make it lighter or thicker.

Take 3 kinds of ice cream, let them soften, then put them in 3 layers in loaf pans and re-freeze them. Then put the bottom of the loaf pan in warm water so that you can flip the ice cream onto a cookie sheet. Refreeze again for a few mins so that top can re-freeze. Slice into ice cream slices and wrap in cellophane wrap, put slices in zip lock bags and refreeze them. People can best eat them by unwrapping the cellophane down to the bottom, holding it by the cellophane and eating it like a sandwich. You can add chopped nuts or crushed oreos or crushed peppermint candies to the ice cream if you like, either at the beginning inside the ice cream layers or at the end, rolling the ice cream slices in them.

Blueberry Cream Cheese Dessert

Ingredients Needed:
1 stick margarine
1 cup flour
1 cup pecans
2 (8 oz.) pkgs. low-fat cream cheese
2 (16 oz.) tubs Cool Whip
1 box confection sugar
1 can blueberry pie filling

Directions:
1. Melt butter. Mix flour and pecans with melted butter. Pat down in your glass baking dish (9x13) and bake for about 10-12 minutes on 350 or until light brown. Remove and let cool.

2. Mix together both packages of low-fat cream cheese, one bowl of cool whip and one box of confection sugar. Spread this mixture onto pecan crust. Then add blueberry pie filling and top with remaining bowl of cool whip. Refrigerate until chilled and serve.

NOTE: If you don't like blueberries, you can easily substitute cherry pie filling...either is delicious!

Canoli - but the shells, ricotta cheese, almond extract and powdered sugar. The recipe is on one of the boxes I can't remember which one right now. But it takes 5 minutes to mix and about 15 minutes to stuff the shells. It is a traditional Italian recipe and it is really good.

Cherry Cheese pie

Beat an 8 ounce brick softened cream cheese with hand mixer till fluffy. Stream in one can sweetened condensed milk and mix together until creamy. Beat in 1/2 cup fresh lemon juice and 1 teaspoon vanilla extract. Pour into a store bought graham cracker crust and refrigerate overnight or at least 3 hours. Before serving, top with one can chilled cherry (or blueberry!) pie filling and slice.

Slice ripe bananas, put chocolate pudding over them (I like the refrigerated Kozy Shack brand the best). Chop maraschino cherries and add it them. Stir it up and you can put Cool-Whip on top if you want.
For one tub of pudding, 22 oz., use 4 bananas and a small jar of cherries + the juice. You can make instant pudding instead, it's cheaper and large containers of pudding isn't available every where. you'll get raves and they will think you worked soooo hard. Good luck!

Miss Rachel's Chocolate Pudding

1 cup sugar
5 tablespoons flour
1/4 cup cocoa
2 egg yolks
1 1/2 cups milk
1 tablespoon real butter
1 teaspoon vanilla

Mix sugar, flour, and cocoa in saucepan. Beat egg yolks into milk and add gradually to flour/sugar/cocoa mixture. Bring to a slow boil stirring continuously over medium heat. When pudding thickens remove from heat and stir in butter and vanilla.

Panna cotta - and because you make it a day in advance, all you have to worry about when they arrive is plating it. You can make it in teacups if you don't have ramekins. And because it's very plain (though very good!) you very rarely have to worry about people not liking it.

This recipe is disgustingly easy, and delicious - I cheat and make it with imitation vanilla essence because I'm a poor student, but use proper vanilla extract if you're wanting to impress. You can either serve them in the teacups (saves plating) but looks much more impressive on individual small plates - serve on a drizzle of raspberry coulis.

Panna Cotta
Serves 6

Ready in 4 Hrs 15 Min

Ingredients
1/3 cup skim milk
1 (7gm) envelope unflavored gelatin
2 1/2 cups heavy cream
1/2 cup white sugar
1 1/2 teaspoons vanilla extract

Directions
Pour milk into a small bowl, and stir in the gelatin powder. Set aside.
In a saucepan, stir together the heavy cream and sugar, and set over medium heat. Bring to a full boil, watching carefully, as the cream will quickly rise to the top of the pan. Pour the gelatin and milk into the cream, stirring until completely dissolved. Cook for one minute, stirring constantly. Remove from heat, stir in the vanilla and pour into six individual ramekin dishes.
Cool the ramekins uncovered at room temperature. When cool, cover with plastic wrap, and refrigerate for at least 4 hours, but preferably overnight before serving.

Raspberry Coulis
Ingredients
2 pints raspberries (I'd just grab a bag of frozen berries)
1/2 cup water
3/4 cup sugar
2 tablespoons cornstarch (or cornflour, depending where you're from)

Directions
1Crush the raspberries with water in a saucepan.
2Add sugar and cornstarch.
3Bring to a boil, stirring constantly.
4Reduce heat and simmer 2 minutes.
5Push through a foodmill or strainer.

Now, to serve - Upend the panna cotta onto the side of a small plate, then just drizzle coulis or even chocolate ice-cream sauce in a zigzag or around the edge of it. Gives visual impact and a flavour contrast.

Oh and for squirting the coulis - just get an oven bag or freezer bag and cut a tiny hole in one corner, fill it up with the sauce and use like a piping bag. Easy.

INGREDIENTS
2 cups butter
1 pound processed cheese food, cubed
4 (16 ounce) packages confectioners' sugar
1 cup cocoa
1 tablespoon vanilla extract
2 tablespoons chopped peanuts
DIRECTIONS
Melt together butter and cheese.
Mix in confectioner's sugar and cocoa into the butter mixture. Stir in vanilla and nuts. Spread on two big cookie sheets. Cool. Cut. Store in refrigerator.
