How do you recreate Nandos chicken at home?!


Question: Is there a recipe for the marinade that anyone knows ?
I can keep the bird moist(ooeer) by cutting out the backbone of the whole carcass ,then flattening it-then regular basting--thats what I see when I eat there.
But help on the marinade please folks.--and getting the skin blackened,
OB1 KNO BEe you are my only hope.

Chicken Peri-Peri Recipe
Ingredients
1/4 cup fresh lime juice
2 tbsp cider vinegar
1/2 tsp paprika
1/4 tsp angostura bitters
1 tsp hot pepper sauce, or to taste
1 dried hot red chili
1 fresh chili (such as jalapeno)
2 cloves garlic
2 lb whole chicken breast, with skin and, bone


Directions

Combine the lime juice, vinegar, paprika, bitters and hot pepper
sauce in a glass baking dish.

Wearing kitchen gloves, split the dried chili with a sharp paring
knife and remove the seeds. Do the same with the jalapeno pepper.
Mash the peppers with the garlic into a smooth paste using a mortar
or an electric spice grinder. Add the paste to the lime mixture in
the baking dish and combine.

Toss the chicken pieces and swish them in the marinade until they are
completely coated. Cover and let marinate overnight in the
refrigerator.

Remove the chicken from the marinade and grill or broil until cooked
through and burnished, about 20 minutes on each side. Baste
frequently with the marinade. If the chicken looks like it is
beginning to burn, move it farther away from the heat source. Serve
hot with chilled orange sections and plenty of napkins.

you can buy original nando's marinade sauce from asda £2 a bottle i get it all the time

Yeah, you can get the marinade from a supermarket. Blackening the skin comes from cooking on an open fire, I suggest waiting until BBQ season.

Here is one of several nandos chicken recipes. I could not find one using a whole split chicken but heres the web page below and the recipe.
BBQ Chicken with Nando’s Lime and Cilantro Marinade
6 servings

6 chicken breast halves
1 bottle Nando’s Lime and Cilantro Marinade
Salt & Pepper

Pour Nando’s Lime & Cilantro Marinade in a 15 x 10 x 2 inch-baking dish. Add chicken breast halves and turn to coat. Cover and refrigerate for a minimum of 3 hours or overnight, turning occasionally. Prepare BBQ (medium heat). Remove chicken from marinade, sprinkle with salt and pepper. Grill until chicken is cooked through, turning occasionally, approximately 10-15 minutes.

If you want ir to be blackened put some seasoning all over it and place the whole split chicken into a large pre heated cast iron pan. (about 14" in diameter) place a second heated pan over the top of the chicken to press it down. Cook 6 to 8 minutes on each side then finish in a 350 degree oven with the cast iron pan still on top of the chicken for 30 minutes.
