6 cups water
2 cups beer
1/8 cup salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 (3 pound) whole chicken
hickory or mesquite wood chips
2 tablespoons ground cumin
2 tablespoons curry powder
2 tablespoons chili powder, divided
1 tablespoon pepper
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper

Combine brine ingredients - water, beer, 1/8 cup salt, garlic powder, and onion powder - in a large container, one that is large enough to hold the brine and the chicken. Soak whole chicken in brine for 1 hour.
Soak wood chips in water for 1 hour.
Preheat grill for indirect cooking method. Place wood chips over coals when ready to cook.
In a small bowl, combine cumin, curry, chili powder, pepper, 1 teaspoon salt, paprika, and cayenne pepper. Rub chicken inside and out with spice mixture.

Place chicken on grill, breast side down. Close lid, and cook for 30 minutes. Turn over, and cook for an additional 25 minutes, or until juices run clear and temperature is 185 degrees in the thickest part of the chicken. Keep the lid closed while cooking for even cooking, and to get more of that smoky flavor.

Lemon Garlic Chicken

Ingredients

# 6 boneless skinless chicken breasts(4oz each)

Marinade

* 2 tablespoons fresh lemon juice
* 2 tablespoons white wine
* 2 tablespoons lite olive oil, divided(or virgin if you prefer)
* 2 cloves garlic, minced
* 1 teaspoon honey
* 1 teaspoon dried oregano
* salt and pepper
* lemon slices(for garnish)
* fresh oregano(for garnish)

Directions

1. In a shallow glass dish mix the marinade: lemon juice, wine, half the oil,garlic, honey, oregano, salt& pepper.
2. Add chicken to the marinade, turning to coat.
3. Cover the dish and refrigerate for 30 minutes.
4. In a large skillet heat remaining oil over med.
5. highheat until hot but not smoking.
6. Add chicken to skillet (discard the marinade).
7. Cook turning once until cooked through (about 20 minutes).
8. Place chicken on a serving platter, garnish with lemon slices and fresh oregano.
9. Serve.

This is the perfect roast chicken...

Take a whole chicken, up to 4lbs. Cut out the spine and clean the inside. Lay it flat in a pan. Spray with nonstick cooking spray and sprinkle salt (or garlic salt) and pepper over it. Put into a preheated 500F oven for 20 minutes, then turn the pan completely around and roast for another 20 minutes. The skin comes out crispy and the chicken is juicy and delicious.

Ingredients:
1/3 cup mayonnaise
1/4 cup grated Parmesan cheese
4 tablespoons savory herb with garlic soup mix
4 boneless skinless chicken breast halves
2 tablespoons dry bread crumbs


Directions:

In a bowl, combine mayonnaise, Parmesan cheese and soup mix. Place the chicken in a greased 11-inch x 7-inch x 2-inch baking dish. Spread with the mayonnaise mixture. Sprinkle with bread crumbs. Bake, uncovered, at 400 F for 20 to 25 minutes or until juices run clear and a meat thermometer reads 170 F.
