1 1/4 cups sugar
2/3 cup oil
3 eggs
3 bananas, mashed

FROSTING

Directions
1Cream oil and sugar.
2Add eggs one at a time, beating after each.
3Add all other ingredients.
4Bake in 9x13 pan at 350F degrees for 30 minutes.

6Mix shortning and oleo.
7Mix in 1/3 of sugar.
8Beat well.
9Add bananas alternately with sugar.
10Mix until smooth and creamy.


Banana Maple Nut Coffee Cake
TOPPING
2 tablespoons unsalted butter, room temp
1/3 cup firmly packed brown sugar
1/2 teaspoon ground cinnamon
1/3 cup coarsely chopped walnuts
BATTER
4 tablespoons unsalted butter, room temp
1/2 cup sugar
1/2 cup maple syrup
2 eggs
3 ripe bananas, mashed
1 2/3 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup coarsely chopped walnuts
Directions
1To make the topping mix all ingredients together using your fingers or a wooden spoon, mix in the nuts.
2Preheat oven to 350*F. Brush an 8X8 inch square pan or a 9X2 inch round pan with melted butter and dust lightly with flour, or spray generously with cooking spray.
3Beat the butter, sugar and maple syrup with an electric mixer. Add the eggs all at once. Scrape the sides and bottom of bowl. Mix in the bananas.
4Sift together the flour, baking soda and salt; add to the banana mixture, blending well. Stir in the walnuts. Spread into prepared pan. Drop the topping in small dollops onto the banana batter. Bake for 45 to 50 minutes or until the coffee cake is a deep golden brown and a toothpick inserted into the center comes out clean. Cool in the pan for 30 minutes. Invert onto a plate,then invert again so coffee cake is right side up on a serving plate.


SCOTTISH SULTANA CAKE
8 ounces sultanas(seedless white raisins)
4 ounces butter or firm margarine, cut up into small pieces
6 ounces sugar
6 ounces self raising flour(or all-purpose flour with baking powder)
2 small eggs, beaten
2 ounces chopped nuts (optional)
3 drops almond essence
1 pinch salt
Directions
1Cover the sultanas in water and let them soak overnight.
2Bring the water and sultanas to the boil and then strain off the water.
3Mix in the butter or margarine while the sultanas are still hot.
4Mix in the sugar, beaten eggs and almond essence.
5Sift in the flour and salt and then add in the chopped nuts (if desired).
6Mix well.
7Grease an 8" round baking tin and line the bottom with greased, greaseproof paper (vegetable parchment or waxed paper).
8Pour in the cake mixture and smooth the top.
9Bake in a moderate oven at 350F for 30 minutes.
10Reduce the heat to 300F until the centre is firm to the touch.
11Empty cake from the baking tin and store in an airtight container.


OLD FASHIONED BOILED SULTANA CAKE
250 g margarine
2 1/2 cups sultanas
1 cup sugar
1/2 teaspoon baking powder
1 cup water
2 eggs(well beaten)
1 cup self raising flour
1 cup plain flour
Directions
1Place butter, sultana's, sugar and water in saucepan, bring to the boil, cover and let simmer for 3 minutes.
2Allow to cool.
3Add the eggs one at a time, then sifted flours and baking powder.
4Mix, pour into a lined 7" x 8" (18 x 20cm) square tin.
5Bake at 180 celcius or until a skewer comes out clean.


SULTANA CAKE
1 lb sultanas
4 ounces cubed butter
3 eggs
1 1/4 cups sugar
2 cups flour, heaped
2 teaspoons baking powder
1 tablespoon brandy or brandy flavoring
Directions
1Put all sultanas in a large pot and cover with water, boil gently for 5 minutes.
2Strain sultanas in a colander then put sultanas back in pot.
3Add butter, stir and leave to cool.
4beat eggs in with the sugar then add to sultana mix then add essence, 2 large cups plain flour and the baking powder.
5Mix well with wooden spoon till combined.
6Line 9x9in cake tin (or other suitable tin)with greased paper on bottom and sides.
7Bake in 190 celsius oven for 30-45 mins till knife inserted in middle comes out clean.
8Ice with one layer of almond icing and one layer of royal icing and decorate as desired.
