How long will home made french chocolate eclairs last? Overnight?!

Question: I'm going to make these with french choux paste. Don't know whether I can make the pastry shells today and fill them tomorrow...Anyone know?

If filled, basically no more than a day. If unfilled, up to two days if stored in a paper sack which is taped shut. Not recommended for more than overnight, but can be held. This will keep them dry and crisp. I try to never go more than one day but have had to a few times. They lost a little of their texture but not enough to be a bother once they were filled.

Store in a cool place!!

Here is a favorite web site which will give you lots of really great information.

Bon Appetit!

Yes, you can make the shells in advance...just don't refridgerate them. Keep them in an air tight container after they have cooled.

Yes you can. Put them in the fridge overnight and they should be fine. (Let them cool in the open air first, though, so they can dry out, or else they'll be soggy).

I use to fill mine with soft ice cream and then freeze them. They lasted several days. Or they would have lasted that long if they'd been given a chance. 8^)

(Well now I see you have one answer that says not to refrigerate them and one that says you should. 8^< I guess they would last overnight outside the fridge. But refrigerating them won't hurt!)

It depends on how many you make and how many people are in the house. If no one is chowing them down, they should last a couple days in the fridge, but they'll probably get soggy over night.
Actually that 2 day thing might work, but I'm not sure.
If the filling is in them, you must refrigerate them. Most fillings are made with dairy products or substitutes. Bacteria grows in this stuff very quickly if left at room temperature.
You don't want anyone to get food poisoning.

The frosting is what may not last overnight. I make mine with powdered sugar, cocoa and egg white. Sometimes it starts to run after being in the refrigerator a couple days.
