Poll: how do you cook spinach.?!
Answers: I like to stir fry them with some meat or fish. Fast and delicious.

dont cook it for too long or it gets soggy. or dont cook it at all clean it really well and put it in salad
cook it with a smoked turkey leg in water
you can microwave it or add to things on the hob and let it wilt...not sure apart from that!
I heat a lil canola or olive oil then add diced onions and 1 clove minced garlic. To this I add fresh spinich. Heat thru and add a dash of salt and crushed red peppers.
Fresh Spinach should be rinse with cold salt water; then placed in 1 qt saucepan add 1/2 c water with 1/2 tsp salt, add 1/2 tsp of red pepper, add 1/4 c of Italian dressing and heat on med-low heat and bring to a boil;remove from heat and let stand for 5 minutes and then serve.
I love creamed spinach. Here's a might good recipe for it:
2 pounds fresh spinach, washed and tough stems removed
2 tablespoons unsalted butter
1/2 cup finely chopped shallots
1 teaspoon minced garlic
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon nutmeg
1/2 cup heavy cream
Bring a pot of salted water to a boil over high heat. Add the spinach and cook for 2 minutes. Drain in a fine mesh strainer, pressing with a large spoon to release as much water as possible. Finely chop and set aside.
Melt the butter in medium saute pan over medium-high heat. Add the shallots and garlic and cook, stirring, until soft and fragrant, about 2 minutes. Add the spinach and cook, stirring, just until the liquid is released. Add the cream, salt, pepper, and nutmeg, and cook until the cream is reduced by half, about 4 minutes. Remove from the heat and serve immediately.
I also like to use spinach to make chicken florentine, trout florentine and spinach lasagna!
I always buy frozen chopped spinach and cream it. Fresh could probably be used if chopped first
I cook it in a little water ,drain and keep cooking water ,
I put some margarine into a med. hot pan and let melt, glaze some chopped onions in the margarine, add a tbsp or so flour and stir hard then I slowly add cooking water and a little milk until I have a white sauce with onions
Then I add the chopped spinach and season with salt, pepper, a little sugar and lots of nutmeg also a little more margarine, because I like a buttery flavor.
Other than in salad , that is the only way I like spinach :-)
Since it's everyone in the family's absolute favorite veggie (including the kids), I make it all kinds of ways.... fresh spinach and frozen chopped spinach... I make Spinach Salad; put a layer in the center of meat loaf; add it to soups; quick-saute fresh spinach with bacon... and make THIS:
Spinach & Rice Casserole
1/4 c. melted butter
8 oz. shredded cheddar cheese
1/2 c. chopped onion
1 pkg. frozen chopped spinach, thawed & drained
1 c. Minute Rice
1/2 tsp. garlic salt
1/4 c. sour cream
Mix all together really well. Put into 2 qt. casserole and bake, covered at 350 for 1 hour....
Wash well, shake off excess water, place in pan and wilt. Season with salt and pepper and serve.
Two options
#1 Steamed in chicken broth
or
#2 Sauteed in butter.
Guess which is healthier...and guess which I prefer...hee hee
Wilted Spinach Salad
2 hard boiled eggs, chopped 2 cooked bacon slices, chopped
1 chopped onion 2 cloves minced garlic
2 TBS. honey 1TBS. apple cider vinegar
1-1 lb. bag baby spinach, washed Kosher salt & pepper
Leaving sm. of bacon fat in pan, add onions & garlic & cook 5 min. until soft. Add honey & vinegar & keep cooking until onion has carmelized, about 5 more min. Toss the spinach into pan, sprinkle w/ salt & pepper, & toss w/ tongs until spinach is just wilted, about 30 seconds. Serve spinach in individual bowls, adding bacon & chopped eggs atop.

Choose fresh, green spinach without brown or yellow spots.
Step 2:
Remove wilted or discolored outer leaves and discard.
Step 3:
Wash spinach thoroughly to remove sand or dirt.
Step 4:
Remove excess water from leaves with a salad spinner.
Step 5:
Trim off tough stems as much as possible, and remove any root material.
Step 6:
Chop or use whole leaves - you can also chop the spinach after cooking, if you wish.
Step 7:
Cook spinach the easy way by dropping it into a hot skillet with just the water that still clings to the leaves from washing. Fold the cooked spinach at the bottom of the pan over the uncooked leaves at the top. Keep adding leaves as the spinach cooks down. The spinach is cooked when the leaves are wilted completely but still bright green, which takes about 2 minutes.
Step 8:
Sauté spinach with garlic, oil and some red pepper flakes - again, it'll be done in about 2 minutes. Accent with lemon juice.
Step 9:
Stir-fry spinach with garlic and ginger. Top with tofu and peanut sauce.
Step 10:
Use cooked spinach in omelettes and frittatas.
Spinach shrinks dramatically in volume when cooked. One bunch might serve four people as a side dish... if they're not especially fond of spinach, that is. Good thing it's pretty cheap.
If using cooked spinach in a recipe, you'll probably want to squeeze all the water you can out of the cooked spinach, then chop it.
For a simple peanut sauce, combine 1/4 c. smooth, preferably unsweetened peanut butter with 2 tbsp. hot water; add 2 tbsp. soy sauce, 1 1/2 tbsp. vinegar, and 1 to 2 tsp. Asian chili garlic sauce.
Spicy Fried Spinach
1 or 2 bunches spinach
2 tablespoons ghee
2 tablespoons oil
2 large onions, finely sliced
2 cloves garlic, finely chopped
1 teaspoon finely grated fresh ginger
1 teaspoon cumin seed
1/2 teaspoon black cumin seeds, optional
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground turmeric
1 teaspoon chili powder, optional
1 teaspoon salt, or to taste
Wash spinach well in several changes of water and remove tough stalks.
Heat ghee and oil in a large saucepan and fry the onion until golden, then add garlic and ginger and fry, stirring, for a further minute or two.
Add seeds, ground spices and salt and mix well, then turn in the spinach with only the water that remains on the leaves after washing.
Toss in the spicy mixture, then turn heat very low and cook uncovered, stirring frequently, until spinach is cooked. It may be necessary to add a little more water to prevent spinach sticking to pan.
Serve with rice, chapatis or other Indian breads.
Serves 4 to 6.
Spinach Rolls
1 lb. fresh pizza dough (or store bought)
1 lb. fresh spinach, washed, drained and coarsely chopped (frozen spinach wont work; too much water)
1 small onion, chopped
grated cheese
pinch of red pepper
olive oil
1 egg beaten
Roll out pizza dough into thin rectangle and place on greased cookie sheet.
Spread chopped spinach evenly over dough. Sprinkle with chopped onion, cheese and pepper. Drizzle olive oil over, then gently roll dough jellyroll fashion, making sure the seams is on the bottom shape into a crescent.
Using a fork, poke 8 to 10 holes in the dough, so it can breathe and brush roll with beaten egg.
Bake at 350o for 40 minutes. Slice and serve cold or hot.
Tip: you may use chopped broccoli or shredded mozzarella for spinach.
Spinach Stuffed Tomatoes
3 slices bacon
1/2 cup chopped onion
8 oz. fresh spinach, chopped
1/2 cup sour cream
dash hot pepper sauce
4 medium tomatoes
1/2 cup shredded mozzarella cheese
Cook bacon till crisp, drain, reserving 2 T drippings. Cook onion in drippings till tender, stir in spinach. Cook, covered till tender.
Remove from heat and stir in sour cream, crumbled bacon, and pepper sauce
Cut tops from tomatoes; remove centers leaving shells. Drain. Salt shells, place in 8 x 8 x 2" baking pan. Fill with spinach mixture.
Bake 375° F. for 20-25 minutes. Top with cheese; bake till cheese melts, 2-3 minutes more.
I mostly use it raw in salads and sandwiches. When cooking it, I sauté very briefly in olive oil or butter.
I prefer my spinach fresh rather than cooked..
I don't know how to cook spinach.
