Terriyaki sauce didn't freeze...?!


Question: A week ago I made terryiaki sauce and had leftover sauce so I put it in the freezer. This week I took it out to use and it was still in liquid form. Everything else in the freezer is still frozen so it isn't a broken freezer. The ingredients included, balsamic vinegar, honey, garlic, ginger...does vinegar not freeze? It is the strangest thing. Now because it didn't freeze and that was over a week ago, should I not use it? Has anyone ever had this happen?

Putting enough salt and/or sugar in will prevent freezing, especially in a refrigerator freezer which is typically not quite as cold as a deep freezer. If it has that much salt and/or sugar, they will also act as very effective preservatives. I would use it with no hesitation.

It takes a lot to freeze vinegar. Balsamic has fermented grapes, so you're getting into the whole alcohol not freezing type of scenario. You certainly can still use the sauce, it's been kept cold.

vinegar actually freezes at a higher temperature than water. So that should have helped it freeze.
