Creamy Vegetable Bake

1pkg philadelphia brick cream cheese softened
1/3 cup milk
1/4 cup kraft parmesean grated cheese
1 tsp. dried basil leaves
4 large carrots, diagonally sliced
8 oz (225g) sugar snap peas
8 oz (225g) fresh asparagus, cut into 1 inch length
1 large red pepper chopped
1 pkg stove top stuffing for chicken

Preheat oven to 350F Mix cream cheese, and milk in large microwaveable bowl. Microwave on HIGH 1 min..or until cream cheese is melted and mixture is blended. Add Parmesean cheese and basil, stir until blended. Add veggies, toss to coat.
SPOON into greased 13x9 inch bake dish. Prepare stuffing as directed on pkg. spoon evenly over veggie mixture.
Bake 30min or until heated through and stufing is golden brown
Makes 10servings (3/4cup each)

Tuna Fish Cakes

2 cans white tuna in water, drained, flaked
1 pkg. stove top stuffing for chicken
1 cup mozza-cheddar shredded cheese
1/2 cup shredded carrots
1/4 cup miracle whip dressing
2 tbsp. sweet pickle relish
3/4 cup water.

Round up your ingredients ahead of time. Using stove top stuffin in this recipe gives it a perfectly seasoned taste.

Mix the tuna, stuffing, cheese, carrots, dressing, relish and water in a bowl.
Cover the bowl and refrigerate for 10min*
Heat a large nonstick skillet sprayed with cooking spray on medium heat. Scoop tuna mixture using about 1/3 cup for each cake into skillet in batches. Try using an icecream scooper to make evenly portioned tuna cakes.
Gently flatten tuna cakes using a spatula.
Cook 3min on each side or until they're golden brown on both sides, turning cakes over very carefully
Makes 4 servings. (2 tuna cakes each) toss up salad to go with it:)

Chilli*

Brown up Ground beef, drain, put back into pot
add one small onion
salt , pepper,
add one can drained/rinsed..red kidney beans
add one can tomatoes (crushed, whole, diced...whatever kind)
add 2-3 tbsp. chilli powder,
combine all in pot
put lid on
simmer on low for about an hour*
have garlic bread and tossed salad with chilli*

in crockpot/slow cooker*

add one diced onion
2-3 peeled, diced carrots

in fry pan, brown porkchops on both sides(dont cook through just Brown outsides)
season with salt/pepper
place browned chops ontop of onion and carrots

add bbq sauce with one cup of water, mix in cup ..pour over porkchops

put lid on, set heat to LOW and leave it for 7hrs*

make 5min rice with meal* and some fresh bread

a lot of stuff Rachel Ray makes is good and good for you.. adn you can make it in 30 minutes.. you can download her cookbooks or buy them at a book store.. Boil chiken... boil white or brown rice.. boil veggies... weat bread and fat free butter... bbq the chiken or teriyaki for a totally different style and its verrrrrrrrryy good... sandwhiche r always good.. or make stuff they like just use all organic products.. say they love hamburgers... use veggie meat and they wont know the diff. whole wheat bread.. tomatos.. letuce.. low fat cheeese.. my fav healty dinner that my mom makes me and my bro islow fat mexican rice or brown rice.. with boiled chicken andcorn tortillas... low fat ones.. organic ones maybe... and make chicken soft tacos its soo good.. there is so many things.. be creative.. my mom has hmade up like 500 dinners of her own.. make the kitchen your canvas hehe

Why not go to the library, use the reference dpt., and spend some time browsing the various cook, books, English, Scottish, Welsh, and masses of foreign recipes.?
Another idea, why not take your husband with you.?
I`m genuingly trying to help, not being facetious.
My mother taught us all to cook. Very wise.

low calorie tuna medley with roasted vegetables

Ingredients
300g Potatoes, Old
1 Large Courgette
1 Small Aubergine
1 Medium Yellow Pepper, Deseeded
1 Tbsp Olive Oil
? Sachet Spice Mix, Cajun Potato Wedge, Schwartz*

1 Can/400g Tomatoes, Chopped
150g Tuna Chunks in Brine, Drained
35g Sundried Tomatoes
160g Mushrooms
2 Cloves Garlic
3g Chillies, Very Lazy, EPC (or to taste!)
Method
Bring the potatoes to the boil, reduce heat and simmer for 5-10 minutes.
Pre-heat oven to 230oC / Gas Mark 8.
Cut courgette, aubergine and pepper into wedges and place in roasting tray.
Remove potatoes from heat, drain and slice into wedges, add to roasting tray.
Drizzle with oil, sprinkle with spice mix, and roast in oven for approx. 15 minutes (or until tender).
Meanwhile heat the chopped tomatoes, sundried tomatoes, mushrooms, tuna, chilli and garlic in a pan and simmer for approx. 12 minutes.
Serve roasted vegetables with tuna/tomato sauce. Eat immediately!
