I'm thinking that grilling or pan frying is going to be your best bet with the peppered steak (unless its the "steak and peppers" variation with slices of green and red bell pepper) You want to sear both sides on a higher temperature, and then move the steak to a lower temp to finish cooking on both sides. For medium rare, try 7 minutes on each side, depending on how thick the cut is. Side dishes? I usually make sauteed mushrooms with garlic, butter, and a little cabernet and lots of kosher salt. Then I serve a very lovely baked potato casserole (yukon gold potatos, chopped green onion, sour cream, butter or margarine, kosher salt, pepper, shredded sharp cheddar cheese) and a baby spinach salad with mandarin oranges, candied walnuts, feta cheese, and french dressing.
