Use a wok or a frying pan - turn it on high - put in vegetable or olive oil - wait a couple minutes for the oil to heat up all the way.
Don't use very much oil though - a couple table spoons.

Before you put the asparagus in, rub them down with lemon or lime juice - this helps keep green veggies green.

Put the asparagus in - saute them until they are soft on the outside but still just a little firm on the inside. - about 10 minutes I think.

Add seasonings more towards the end when they're almost done. Don't add that much. I use alot of ground pepper and a little celery salt and a little italian seasonings.

Just remember if you saute them, you need to stir them constantly - asparagus has a thin skin so it can burn if you leave them in heat too long and it will look shriveled up if you use too much oil.

Its pretty simple but this is my favorite way to cook them!

Trim a scant 1/4" off the bottom and lay them single layer in a pyrex pan with 1/4" water in the bottom. Cover with waxed paper and microwave about 3 min. Serve with real butter and a little salt. They should be bright green, and tender, but not limp..... This will give you the full flavor of the asparagus, so you can try it without smothering it in sauces the first time. The short cooking time and very little water keeps most of the nutrients in there too. MUCH EASIER than steaming!

Trim fibrous ends off asparagas. In large saute pan, bring 1 cup chicken broth or water to a boil. If using water, sprinkle water with seasoned salt and pepper. Place asparagas in liquid in single layer and cover. Boil for no more than 2-3 minutes. Remove from heat immediately. Top with a little butter and serve. You can also serve with melted butter and lemon zest for a unique flavor. The key is to not over cook the spears!

Forget the microwave. It destroys the mollecular structure of the food.
But about an inch off the bottom. Put them onto a flat oven safe dish. Sprinkly some olive oil (maybe about 2 tablespoons) , salt, and pepper over them. Bake in the oven on 350 or so for about 15 minutes. Turn them half way through. Voila!

1. Grab it stalk at the ends, bend it until it breaks...the think end is inedible...use for stock or toss...repeat until done.

2. I think broiling asparagus is the best method for cooking...with steaming a close second.

3. I like to toss it with some olive oil, salt and pepper...broil it until it is tender, but still has some bite...like pasta..."cook it al dente"

4. Serve with lemon wedges and/or drizzle lightly (very) with lemon juice prior to serving

5. If steaming...first cook to al dente, then toss with OO, S&P

Other nice adds instead of lemon juice, are simple balsamic vineagrette, light honey mustard sauce, soy-based dressing, tossed at the very end with some thinly sliced and quicly sauted garlic in olive oil...or just your regular 'ole pat of butter.

My favorite way to make asparagus is to buy thin sliced smoked turkey a bit of fresh chopped garlic and olive oil. Pre-heat oven to 350.... in a baking dish drizzle the asparagus with olive oil salt and pepper. roll the asparagus to coat. Then Roll the asparagus up in the turkey exposing the tips. bake for 12 minutes!!!! yummy
