Ranch Dressing is the wayyyy toooo gooooo! hope u like it!

Plain yogurt, sour cream or a combination of the two.

You can use plain yogurt or sour cream or ranch dressing or a bit of spicy brown mustard...just enough to moisten the egg mixture and any of those will do fine!

Ranch dressing?

Dont use anything . Its actually healthier if you take the yolks out.

large hard-boiled egg*, peeled and chopped

1 Tbsp chopped green onion
2 Tbsp chopped celery
Curry powder
Salt
Pepper
1 leaf of lettuce
2 slices dark rye bread, toasted
* To make hard boiled eggs, place a few eggs in a saucepan, cover with at least an inch of water. Add a half teaspoon of vinegar and some salt to the water (if the shells crack while boiling, the vinegar will help keep the egg in the shell). Cover and bring the water to a boil. As soon as the water is boiling, remove from heat and let sit, covered, for 12 minutes. Drain water, add cold water to cool the eggs, let sit a couple minutes longer. (See How to make hard boiled eggs.)


1 Mash up the chopped egg a bit with a fork. Mix together the chopped hard-boiled egg, mayonnaise, onion and celery. Sprinkle with salt and pepper and curry powder. Mix.

2 If you haven't already, toast your bread slices. Put a layer of lettuce on one slice of toasted bread, spread the egg mixture on top of the lettuce, put another slice of toasted bread on top.

Makes one sandwich.

dijion mustard or miracle whip

nothing but mayo will make egg salad taste like "true egg salad".

however you could try some other things like sour cream and yogurt, but who knows how it would taste.

I use a wee bit of margarine or butter, mashed in when the egg is still a bit warm. Lovely!

Dijon mustard mixed into a little bit of plain yogurt will give you the same consistency as mayo. It will have a different flavor but it is still yummy. I make it like this when I am out o mayo. If the yogurt is too thin, you can thicken it by placing it in a paper towel-lined strainer placed over a bowl and refrigerating it for a few hours. The water in the yogurt will drain away and the yogurt will be thick and creamy...a perfect substitute for mayo in any recipe!

I dont know any subsitutes... but that would be just as gross.

Yummy, easy and loved by all, especially mayo-haters ! (Like me. Ick.) Great for beach picnics--can be done with and without food processor.

Ingredients

8 slices whole wheat bread
3 hard-boiled eggs
1 teaspoon curry powder
1 tablespoon olive oil
1/2 peeled cucumber
4 tablespoons light cream cheese(or as needed)

Directions
1Chop cucumber into thin slices (should come out with 12 -16) and halve them so they're semicircles.
2With food processor:.
3Chop eggs roughly and process them with curry powder.
4Without food processor:.
5Quarter eggs and remove yolks.Chop finely and mix in curry powder.
6Chop egg whites finely and combine well with yolk mixture.
7After egg prep:.
8Gradually add the olive oil to the egg mixture until it's of a spreadable consistency--you may need less or more olive oil.
9Spread egg mixture on four bread slices and light cream cheese on the other four.
10Alternatively, mix cream cheese with egg mixture and spread on all eight slices. This is for a really egg-mayo effect, but I prefer them to be separated.
11Press cucumber into four of the slices.
12Put the egg bread slices with the cucumber bread slices.
13Enjoy lovely un-mayo sandwiches !

You can use a clear type of bottled Italian dressing......Even a Caesar dressing would work for an egg salad....You might even want to try a liquid marinade (think Lawry's) Maybe something with a Lemon/Garlic flavor would be nice in an egg salad......Enjoy!!

sour cream or Greek yogurt (much thicker) will work ... and so will any creamy white salad dressing (i.e. Ranch, Cucumber, Caesar). I used to substitute salad dressing all the time, when I made my kids' lunches, so the mayo wouldn't be sitting out all that time....
