Beet salad
Beets drained
mayonnaise
salt & pepper
a little apple cider vinegar
a pinch of sugar
Drain beets. and place them on a paper towel .
If you have fennel or celery......slice & chop them very thinly.....about 3/4 cup or more
If you have any grated cheese ( mozzarella or cheddar) or a really good parmsean cheese works best (but not the stuff in a jar)...1/2 - cup of a grated cheese.
Now make a dressing -Compbine - 1 or 2 teaspoons dill - juice from 1 or 2 lemons - olive oil to taste, dash of rice vinegar and pinch of salt pepper. (or in a hurry just add dill to a mild italian dressing)
mix everything except the beets together.
Then arrange with the beets as an artist on a plate....like a tower....beets - mixture - beets... mixture...
