You could make some mashed potatoes.
Mac and cheese....yummy.
Throw some whole sweet potatoes in the oven at 375, for about 30-45 min. When they're done, slit the top, squish them together and just put some butter into them.....
CARROT & PINEAPPLE SLAW
2/3 c. EACH mayonnaise and sour cream
1 tsp. grated onion
1 TB. lemon juice
1/2 tsp. salt
1 tsp. sugar
1 (13-1/2 oz) can pineapple chunks, well drained
1 c. coarsely shredded carrots
1 c. grated cabbage
1/3 c. slivered, toasted almonds
Mix pineapple, carrots, cabbage & almonds - set aside. Combine remaining ingredients. Add sauce mixture to veggie mix. Toss well and chill. Serves 6
Or steamed broccoli, green beans, or asparagus

Potatoes and green beans or peas and carrots. Mac and cheese would go also, of course it would be better if it were baked mac and cheese but you could use the boxed stuff. If you go that route add a little extra cheese like shredded cheddar if you have it.

Here are some nice and different salad recipes:
Cucumber Salad
Slice 2 peeled cucumbers. Slice thinly. Add 1 small sliced or chopped red onion. Cover with bottled red wine vinaigrette dressing. Salt and pepper to taste. Best if you let sit in refrigerator for at least an hour.
Bacon Salad
4 slices bacon
1 lg bowl salad greens
? chopped red onion
Salt
Pepper
Red Wine Vinegar
In salad bowl, combine the salad and onion. Coat with ? cup red wine vinegar, salt and pepper. Chop bacon into little pieces. Cook until crispy. (You may need to add a little olive oil if bacon is very lean). Pour bacon and grease over salad.
Tomato Cucumber Salad
4 medium fresh tomatoes, cut into 1 inch chunks
1 large cucumber, sliced
1/2 red onion, diced
1/4 cup mayonnaise
2 cloves garlic, minced
2 teaspoons fresh ground black pepper
salt to taste
In a large bowl, toss together the tomatoes, cucumber, onion, mayonnaise, and garlic. Season with pepper and salt.
Southwestern Ranch Salad
1 pkg. pre-cut salad mix
? cup shredded sharp cheddar cheese
1 cup ranch flavored croutons
? cup ranch flavored almond salad topping
Hidden Valley Spicy Ranch dressing
Salt and pepper to taste
Toss all ingredients together. Serve immediately.
Caesar Coleslaw
1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing
Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!

My Potato Salad
4 potatoes, diced small
4 eggs
1/4 cup sweet relish
2 tablespoons prepared mustard
1/2 cup mayonnaise
salt and pepper to taste
Bring a large pot of salted water to a boil. Add potatoes and cook until tender. Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; peel and chop. In a large bowl, combine the potatoes, eggs, sweet relish, mustard, mayonnaise and salt and pepper. Gently mix together and serve warm.

this may be a little different, but my mom usd to boil her ham in water, and she would peel a few potatoes and boil them right along with the ham, and when they were soft she would serve them with the ham and we would just smash them up and add butter to them, and the ham added a lot of flavor to them.
